  • hey friends :) this week was a hard one. I really felt uninspired & unhealthy. telling myself it’s all about your mindset and what you eat is what you are! I hope you guys enjoy the honesty & these purple carrot tips!

    QUINOA CHILI
    throw a cup of quinoa, black beans, corn, chopped onions can of tomato w/ green chilis in a crock pot. then 2 cups of veg broth. add fresh lime juice, cilantro, chili powder, S&P. I also love salads verde so I add that too (why not?)
    I topped with avocado & cheese (not vegan because I’m weak)
    cook on low for 8 hours or hi for 4 hours
    PURPLE CARROT - SPRING VEG GNOCCHI
    kk guys I don’t want to be sued so I’m just giving you the gist. this is a completely vegan gnocchi with a lemon basil butter sauce, carrots & asparagus. amazing....
    PURPLE CARROT - BEET & BACON FLATBREAD
    bacon? well, no. coconuts flavored to TASTE like bacon using liquid smoke, maple syrup & tamari. brilliant.
