Hey, I'm looking into espresso machines now and I'm just not sure if I will need a 2 group machine or if something like the La Marzocco GS3 would be suitable and not be outpaced. I guess I'm mostly curious if you think you could get away with a single group machine?
It will definitely depend on the types of events you are doing/volume you expect. For our farmers markets we definitely need a two group to get drinks out in a timely manner. For a lot of our private catering gigs/daily setup a one group we could make work. I know quite a few truck owners who started with a single group (which worked just fine), but ended up switching to a double to keep up with volume. It can also allow two people to be steaming/pulling shots which helps a lot with workflow.

We use double insulated custom cups. We serve 8oz 12oz and 16ox based on the drink!
