    Tia Janet...(I hope you don't mind I call you Tia) you remind me of some of my Tias from years past...Thank you so much for your traditional recipes! I've made your salsa roja many, many times for my family and they (especially my wife, who makes a great salsa as well) enjoy it very much!
    It's been tough keeping up with the demand the past couple of weeks!
    I have an old molcajete that my father left for me that was once my Grandmother's, (Nana Montoya)...I want to use it, but I don't have a lot of the time that she had to make the wonderful foods she made for us growing up.
    Anyway, i think that it's so wonderful that you are sharing your great talents for all that are passionate about keeping the old traditions alive and well!

    I made this tonight. This salsa really is sensational just like the title says!! I have been looking for a recipe for red sauce for sooo long and this is exactly what I wanted! I have to say though that I only used 1 serrano and 1 jalapeño and that was PLENTY hot enough for me :-D Thank you for your wonderful recipe! I look forward to trying more.

      +Jason Starwalt Hola Jason. Thanks so much for your lovely comment. You just made my day :) The tomatoes should boil for a time necessary and sufficient to allow the skins to burst slightly. This is the best sign to judge doneness. Then, simply cool down away from the burner to complete cooking, and you are ready to prepare the salsa. This one is bright, fresh and so full of flavors.     I'm 15 and I found your channel yesterday, because I love mexican food and I want to know new recepies. I wish that in Poland, where I live I can't buy fresh jalapeños, serranos, habaneros etc. Only chili and jalapeños in marinate :(
    From other your films I can also learn a little bit spanish, because I study it in school :) Muchas gracias!

      Oh, thank you for new spanish word - escabeche :) I know, that chilis en la escabeche are't good for this, but when you heven't what you like, you like what you have ;) I know, that jalapeños are more spicier than red chillis, so I just put in my mexican food a lot of chillis, but it isn't still that, I think :/

      +Michalczewski 01 Hola! Many thanks. It would be great if you could grow your own chiles, as I do some chiles and herbs (epazote). Jalapenos are ~1 order of magnitude less spicy than are serranos, as judged by the Scoville scale (capsaicin), and are a bit sweeter, more perfumed than serrano chiles. Serranos pack a rich, deep, well-rounded sense of layers of heat in Mexican cuisine. I hope this is helpful. Saludos, y muchas gracias.

    Gracias for sharing your techniques. It helps to watch you blend and you give such great and helpful tips. I’ve been learning from my fiancé (from Mexican) and there are a lot of tips I’ve picked up from your videos that I really appreciate so I can give a more authentic flavor from his upbringing.
    Can you do a video on how to season the molcajete?
    Also can you tell us where to get authentic Mexican kitchen supplies?

      Wanda Herrera Hola Wanda. Las recetas de chiles para enchiladas rojas son diversas, y con caracteristicas muy individuales dependdiendo de la region de Mexico en donde se preparan. Las salsas con chiles guajillo, ancho, cascabel, y coloradito son espectaculares y creo que le encantara mi receta una vez tenga la oportunidad de subirla a Jauja Cocina Mexicana Mil gracias.

    Beautiful salsa, just add chips and ice cold beer. I have to get me a morta, I live in Oklahoma and have never seen one for sale, maybe I can find one online. As always thanks for the excellent video.

      +redandsonny Hola Jack! Than you for your lovely and thoughtful comment, as ever. Salsa Roja, chips and beer are definitely 3 food groups no one should live without :) In relation to your Molcajete, as long as it is made of a single block of basalt, you can't go wrong. Volcanic stone tends to darken from a light grayish to a dark gray to black over time, particularly the concave grinding surface. The authentic Molcajete is definitely superior to aggregate stone + concrete imitations (read China) with respect to grinding properties and the particle size of powders and pastes. There is a good supplier of Molcajetes here in Austin (El Milagro) brought from one of the "regiones molcajeteras de Mexico". I understand the guys at Mexgrocer dot com also have authentic molcajetes, but I have not personally seen them. I hope this is helpful? Please let me know.

For this Salsa Roja, it is preferable to use fresh chiles although for other Salsas, e.g., Salsa de Chile de Arbol ua-cam.com/video/ZJyuDYfZcbQ/v-deo.html dried chiles are used to achieve a different character.     latin people cook with variuos chilis...i like that...in my country we only cook view of them n not that various,but we like the spicy small one...the spicier the better 😁 spicy food is the best!

      Kit42 Hola Kit. Regrettably, I do not. Cilantro adds a typically fresh layer of flavor to salsas. Are you allergic, or is it difficult for you to find where you live? Please let me know. Happy to help in any way possible :)

      Allergic. I know that a lot of people who dislike Cilantro recommend things like parsley, but that is not the same flavor.

      Kit42 Hola Kit. Thanks for your comment. Regrettably, as you well describe, parsley and other green herbs are hardly mimics of the flavor. No worries, though. You can make this salsa without it and it will still be delish!
