    my favourite cookie recipe uses both. double the amount of baking soda to baking powder. they turn out real good. everyone who has tried the cookies love em

    When I want to enjoy cakey cookies, I use BP
    When I want them to be flat & a little crunchy, I go for BS

    I use BOTH and only 1 tsp each one and my cookies are gooey and perfect so it works for me.

    I use baking powder and baking soda for NYC choco chips. Because it need to make a dome. To make it crispy I add a tablespoon of corn flour (maizena).

    wow i actually used bakin powder once and it looked like the upper part of cupcake🤣 but they were sooooo good in taste much better than the ones when i used soda even though it was the exact same recipe.
    Also, i never knew the difference was because of the difference in raisin agent, i was figuring out till this day🤣😭🤣😭🤣

      soda doesn't mean crispy & thin. it means chewy & soft, but not puffy & airy like cakey cookies. still totally fair to prefer cakey to chewy, but switching from bpowder to bsoda won't make them crispy. you have to do a lot more than just make that one small change!

    This tip is too general. Baking powder and baking soda both have their use in cookies. It depends on what you want to have as the final product

    Gemma, would you perchance have a tip to help a diabetic baker who replaces sugar with Splenda™ and part of the flour with fine almond flour? when I try to make cookies, they come out too crumbly. is there an ingredient I could add to help alleviate that issue? or a proportion of some other that I might alter?

      Almond flour doesn't have the starch to match reg flour in volume measurements. Look at gluten free recipes. They usually add potato/corn/tapioca starch, but I assume you want that omitted to keep your sugar levels in range. GF recipes also use zanthum gum for a better texture, less crumbling. It might work for you.

      @@na195097 I'm not gluten-free, so I HAD tried adding gluten to the recipes, but maybe I wasn't adding enough. I'll have to try the xantham gum (I use it in shakes), it's just so darned expensive here.

      You can also use Monk Fruit Sweetener (Lakanto classic) or erythritol. They are diabetic friendly natural sugars which can be used as white sugar at 1:1 ratio.

      Besides the sugar substitutes, about flours in normal recipes, substitute:
      COCONUT FLOUR FOR AP
      For every cup of all purpose flour (grain flour), you only need 1/4-1/3 cup of coconut flour. For every ounce (1/4 cup) of coconut flour, you typically need one egg and sometimes you might need more. Coconut flour does not have gluten in it and eggs are needed to keep the product together.
      Coconut flour is gluten free so cannot be used in yeast bread recipe which calls for gluten to work with yeast to develop the structure.
      ALMOND FLOUR FOR AP
      Substitute almond flour 1:1 for all-purpose (white) flour.
      Almond flour typically requires more egg or binding agent, so the recipe might need to be altered depending on different recipes. you can also add cornstarch/ tapioca starch, refer to this recipe : www.biggerbolderbaking.com/gluten-free-flatbread-3-ingredient/.
      The goal is to get the same consistency with the recipe that you're following.
      ***Note to watch for sugars in other ingredients, too. Also best to clear it with the doctor. The tolerance for sweets, including sugar substitutes and fruits, is not the same for diabetic persons.

    But... baking soda is just baking powder but without an acid to activate it. That's the whole reason people use baking powder instead of baking soda, so you don't have to add in something acidic just to get the leavening effect

      The baking soda reacts with the sugar in cookies, which makes it rise without turning cakey like one using baking powder. Think honeycomb candy.

    If the recipe calls say 2tbsp of baking powder will it be the same amount if I substitute it for baking soda?

      Hi, Chris! They are not interchangeable for the same result. The ratio is “1 part of baking soda = 4 parts of baking powder” but depends on recipes and your preferred texture. Baking soda yields chewy results with a crinkly top and baking powder yields more puffed up results and cakey texture.

    So in your two other recipe's dor chocolate chip cookies should i just skip the baking powder then coz one of them includes baking powder as well as baking soda

      It really depends on what you want to achieve in your cookies. I don’t use baking powder in most of my chocolate chip cookies. The two that include baking powder, Levain chocolate chip cookies, and the soft chocolate chip cookies need an extra lift. All others are either crispy, chewy or gooey - they don’t have baking powder 😊

    We don't have baking soda in Britain, but there is not a lot of different between powder and soda, if you are British use a quarter teaspoon of tartare powder with baking powder.

      I’m not sure I understood you completely. Did you mean there’s no difference in the cookies? The difference is not radically obvious from appearance, but not in the texture and feel of the cookies. Cookies that use baking powder don’t usually turn out a bit on the chewy side, it’s more cakey than cookie in texture.

    i tried your recipe and it had baking soda but it puffed up alot and was very dry can anyone explain why ?😔

      1. your dough might have been on the dry side. Flour in different places behaves in different ways, depending on how, where, when and the type of wheat grain being milled. They absorb liquid differently. You may need more for yours to get the same consistency with mine,
      2. You might have over handled the dough which strengthened the gluten to prevent them from spreading . Make sure all ingredients are at room temperature and mix until just combined.
      3. Or if your oven runs higher than mine, your chocolate got burnt too fast and the outside of your cookies hardened too fast so they could not spread as expected.
      I DO recommend chilling your cookie dough in the fridge or freezer. However, baking from frozen will affect the texture. Let frozen cookie dough sit at room temperature for 10-15 minutes while preheating the oven then bake them until the edges are set and the cookie is beginning to turn darker or golden brown throughout, but still doughie and a bit pale in the middle. They will set more while cooling down.
