I've told this story a dozen times, but I used to work at a Subway more than a decade ago on overnights (24 hour location) and I remember one evening coming in around 9:30 and the owner was there going over the afternoon shift with the employee. She saw the tuna that was sitting in the tray, and it was a good 2-3" over the top of the container so there was no cover on it and the mayonnaise and tuna was exposed to the air and the entire top layer had turned a deep brown from oxidation. She looked at it for a second and asked how long it had been sitting there, to which he explained it was like that when he came in and he hadn't sold any tuna sandwiches that shift. She took another second, and then directly in front of both of us said "It looks pretty unappetizing. Mix it up so it doesn't look so brown." and I watched in horror as he broke through the brown crust on top and began mixing the entire tray of tuna. Immediately threw it out after they had both left once my shift started, and never ate tuna at Subway again.
