    LAHMACUN
    INGREDIENTS:
    FOR THE DOUGH:
    Flour 400-500gr.
    Water 150 ml.
    Salt 1/2 coffee spoon (per taste)
    FOR THE FILLING
    Ground beef 250gr.
    Onion 1 mid size
    Tomato 1/2 (take the seeds out)
    Green pepper 1
    Parsley a hand full
    Garlic 1-2 cloves
    Tomato paste 1 tablespoon
    Red pepper paste 1 tablespoon
    Olive oil 1 tablespoon
    Salt 1 coffee spoon (per taste)
    Black pepper 1/2 coffee spoon (per taste)
    Red pepper 1 coffee spoon (less if you do not like HOT spicy taste)
    Water 50 ml. (if needed)
    SERVE WITH: (optional)
    Parsley or other herbs
    Lemon
    Pomegranate syrup
    Onion (thinly sliced)
    Sumac
    HOW TO MAKE IT:
    Before you start, pre-heat the oven (the bottom part) at 220 degrees.
    THE DOUGH:
    Put the sifted flour and salt in a big container. Mix them. Then make a little hole in the middle. Put the water in there and start mixing everything to make the dough. Knead the though until you achieve a soft, firm and elastic dough. Cover the dough with a slightly wet towel and put it aside to let it rest.
    THE FILLING:
    Put onions, green pepper (paprika) and the tomato in a food processor. Mix them. Then add the parsley and continue mixing until you achieve a pure-like consistency. Put all in a big container and start adding the rest of the ingredients for the filling; ground beef, tomato paste, red pepper paste, garlic, olive oil, salt, ground black pepper, red pepper (chili pepper) and mix everything well by squeezing everything with your hands. Since we need a wet texture, add 50 ml. of water and continue mixing for another minute.
    Take the dough and cut it into 4 equal pieces. Give a round shape and start rolling it into a nice round shape. Try to make it as thin as possible (bearing in mind that you will put a filling on it.) When you rolled the dough into a round shape about 25-28 cm. in diameter, put it on a non-stick cooking paper.(This will make it easy for you to transfer the Lahmacun in the oven to cook.) Then take some of the filling and spread it on the dough you rolled. Push the filling onto the dough with your fingers and make sure that the filling is evenly distributed on the dough. Then transfer the Lahmacun onto the oven tray in the oven and let it cook in the pre-heated oven for about 7-8 minutes. When cooked, take it out of the oven and repeat the process for the other pieces.
    Your LAHMACUN is ready to eat. However, there is a little more to add to achieve the traditional way of eating Lahmacun. Put some sliced onions covered with sumac, a little bit of lemon juice, parsley or other herbs on it and then roll it and have a big bite! (My son loves adding some pomegranate syrup to have additional taste. This is purely his taste though!)
