It still blows my mind that it is we who are spinning away from the sun as opposed to the sun "just setting", yet we feel nothing given we are used to gravity

It’s not the gravity as such, but rather we don’t feel it because the Earth is spinning at a constant speed. Think of how the acceleration of a plane going down the runway pins you to your seat but once you’re up in the air and travelling at a constant speed you can freely walk around without issue.
But yes; it IS mind blowing!
