I'm curious as I could possibly be, so I must ask..... is it possible to "heave to" with a junk rig? (I learned to heave to with two sails set at opposite angles )
That’s a simple question but the answer is a bit complicated. So, a junk rig boat usually has no Bermudan type foresail to be left aback. But we can, and do sometimes shorten sail, leave the sheet a bit loose and turn the tiller so as to point the boat to windward. Depending on the boat, this should slow the boat right down and leave it just a touch more than drifting along. But a well tuned boat that usually tacked easily might accidentally tack and then bear off, so some might choose to leave the rudder centred and let the boat lie ahull. The junk rig sail, even if left very loosely sheeted will not tend to slap about very much so the sails won’t be damaged by being left in the breeze. Different for schooners, and more expert answers to be found on the Junk Rig Association website. Have a look or join the Association for a genuinely very low fee.
interesting, esp. the way the rig reefs, but on first appearences it looks like a "GAFF" rig, where there is a 'pole', from which the sail is LOWERED, like a single sail of a SQUARE rigged boat, where the pole is also hoisted to opperating position, not as simple to reef as one first thinks, having to lower the whole sail to remove the top triangles.
My JR was a schooner 46’ LOD and the 500 sq.ft. Sails were even manageable for one to handle offshore.

one question, how do you get/maintain luff tension on the sails?, as from the reefing demos, it looks like the "tack" is flying free.

It's called a YARD, not a POLE. You obviously don't know enough about sails to make any useful observations.
