I whisk directly above the boiling water while the water is on low heat. Once you achieve stiff peaks for the icing remove the bowl from the heat immediately
Hello if you watch end of the video I left it out for 24 hours and it was quite a hot day for UK (which might not be hot for you at all) it did not melt and did not change shape at all. The best way would be to make it and test it out and see what happens. Good luck!
It depends on the size of your egg... So for a small egg it'll be 30g, a large egg it's around 50g medium sized egg is 40g. Hope this answers your question

Never tried it with a blender. I don't think it will incorporate air into the egg white the way a whisk would

Icing sugar will not work because it has cornstarch in. Go for granulated sugar instead
Do we need to add half cup boiling water in it after whisking
Hello no no no, do not add any water to it. Check out the video in full I don't add water in it at all.

Hello so I believe 1tbsp of sugar is around 12.6g therefore you will need between 3-4 tbsp sugar per egg white. Hope this helps
