      Do you remember back in the day when the buttercream use crust over?
      Like the roses was hard but when u eat it than it would melt in your mouth… do u know how to crust over the frosting ? American buttercream? With Walmart shortening

    I make buttercream in my mixer. Then, I put it in my food processor. The food processor takes about 95% of the air bubbles out of my buttercream. That really helps me avoid a lot of air bubbles.

    I always just turn my mixer on low after the buttercream is done for 15 to 20 mins with the paddle attachment. That knocks out most of the air and makes a really smooth buttercream

    I decided since I’m creative and having a birthday I wanted to have fun creating my own layered cake this year. I bought a lot of supplies got cheap cake mix and vinilla icing and had fun mixing colors and using my turn table, it wasn’t perfect but decently good for my first time baking and decorating a circle cake. I wanted to have fun learning a new skill and now I have. Perhaps I can learn more in the future to perfect my style,

      You're welcome! Just make sure you are doing this on a crusting buttercream like American Buttercream (which is what I use.). It won't work on a meringue buttercream because that doesn't crust.

      I watch her videos to relax sometimes. End of a long hard day, I will Beng watch a bunch of her videos to relax.
      Or when I am stumped on a order, I don't always watch videos relate to what I am making, that I am stumped on. Most the time, it is completely different then what I am working on. I find she helps clear my head, kinda like wiping the slate clean or starting with a New Paper.... A Brain Reset if ya will! Lol

    I get bubbles a lot…I noticed that after my buttercream has been sitting for just a few minutes (as I’m frosting the cake) more air bubbles form in it…idk? I use milk as the liquid. I tried water and there seems to be less bubbles but not to where I need it. Next time I’m doing the viva paper towel hack. BTW you are an amazing “teacher” and I love your attention to detail. THANK YOU!!

      Tish!! Thank you so much honey, I really appreciate your support! When I feel like air bubbles have formed in the icing, I will take a silicone spatula and carefully mix it around a bit, that does help get rid of a lot of them.

    Hi Karolyn! Admired the demonstration on :Removing Air Bubbles On Cakes.
    If Viva Hand Towels are not available,Typing Sheets will do the job with the use of the smoother.

    Whoa whoa whoa....there's a rough side and smooth side to viva???? How did I never notice this? I use your paper towel smoothing trick on almost every cake I make.
    Do you notice if you make your icing a day or so ahead, there's far less bubbles? That seems to make a huge difference for me.

      Yes there is! On the newer towels, there is a big difference. On the older ones, it was subtle. So maybe that's why you haven't noticed! And I personally feel if I make it in advance that there are more air bubbles the next day. For some reason, when it sits, the bubbles like to multiply! 😂 If that happens, I just put it in the mixer and maybe add a teeny bit more liquid.

    Instead of the hot water, melt some of your buttercream and add it back into the bowl and mix with the paddle attachment on low.

    After making my buttercream, I scoop out a good bit and use a flat silicone spatula to really press the air bubbles out of the butter cream. Once I frost my cake, I get it as good as I can then I pop it in the fridge for a little bit to get firm. I've been use a warm pallet knife to further smooth out sides of the cake. Dipping the knife in hot water and cleaning it off ss i go. I may stick it back in the fridge and repeat the process, But I get really smooth sides and sharp corners by doing this.

    I’ve wasted so much water running my scraper under the hot tap. It never occurred to me that I could use a pan. Hahaha! I also take a few minutes just gently stirring/ push out the bubbles with a spatula after I’m done mixing. I’ll have to try the hot water trick. Thank you!!

    We're we live it's summer and super humid so working with buttercream even with the air con on is difficult.

    If you can’t find the paper towels my grandma taught me a similar method just using parchment or butcher paper instead, you definitely have to wait a few minutes though just to make sure it’s fully crusted!

      You must use a crusting buttercream (like the American buttercream I use in this video). If you try this method on a meringue buttercream, those don't crust, so a paper towel will stick to it!

    Yeah. It was me. My technique is off and impatient. So I’m going to do some ‘self-correction’- and work this thang out.
    You know what I would love to see you do (although it would have to be a mistake Cake or something) BUT….
    I would love to see you cut up (as if serving)-one of your HIGHLY and /or DECORATED cakes.
    That would quite interesting though I would be stressed to see all that work…gone.

      It looks like a lot, but a lot of it was scraped off during the smoothing process! The total amount of icing on the cake is about 1/2" thick.

    Question do you rub vivia paper towels at the same time time while scrubbing or you put in fridge
    If you do put in fridge then what you do top side extra butter cream 😊

      It's similar to parchment paper, I found that butcher paper doesn't stick to the icing and is a little thicker than parchment paper. amzn.to/3RkXB47

      I don't because I don't frost cakes with cream cheese frosting. I feel like it doesn't hold up as well (melts faster than American Buttercream) and it's more difficult to smooth and get sharp lines. But that's just me! Someone else may have a video about that, sorry I couldn't help!

      This method only works with a crusting Buttercream. So the icing doesn’t stick to the towel!

      It depends on what I'm piping. If I'm doing borders or using a bigger tip (Like a 1M or 6B), then it's the same consistency. If I need to write with a small tip (1 or 2), then it needs to be thinned out so the icing can easily flow through it!

    Waow! The paper towel trick is really amazing.
    But is refrigerating buttercream the best, whenever I do that, the cake sweats a lot.
    What can I do?

      You have to control the environment that the cake is in once you remove it from the fridge. When it is hot outside, I have my air conditioning in the house on blast. So the room is cold and the cake won't sweat.
      If you don't have access to air conditioning, you may not want to refrigerate your cakes because you'll have condensation issues!
