Bitterballen (Dutch meatballs) ‘The easy way’

Crispy outside, meaty and mushy inside. It’s one of the food that Dutch offers when you go to the Netherlands and it’s best to eat this with strong mustard. Good thing is that even you cannot go to Holland, you can make it at home. How’s that? 😍🤩
Ingredients:
500 g ground beef
8 tbsp butter
1 cup all-purpose flour
3 cups beef broth (water + beef buillon)
2 tbsp fresh parsley, chopped
1 white onion, diced
3/4 tsp salt
1 tsp black pepper
1/4 tsp nutmeg (optional)
For breading:
1/2 cup all-purpose flour
3 eggs beaten with salt
1 cup breadcrumbs

These are not bitterballen. Bitterballen are a ragout made from beef. You never use ground beef in bitterballen, you use meat ribs and big pieces of meat wich U simmer for hours till they fall appart and the beautiful broth wich U get from that process is used to make the thick sauce for the ragout to wich the strands of beef are than added and this gets frozen (so you can easily roll them and your hands don’t get super sticky and messy). Than the next day you form it into balls and bread it, first flour, than eggwhite (never use the yolk cause they get soggy), than breadcrumbs. And lastly you fry em at about 165-175°C till they are golden brown.

Dutch Bitterballen are no meatballs!
It’s mainly a ragout containing small parts of beef, nevertheless I like them!
Even chef Gordon Ramsey calls it “ Camel shit in breadcrumbs! 😀
By the way, real Dutch bitterballen contain 4 to 10% meat.
