Nice cook. I think an important step from experience is once it's probe tender undo the foil and let it sit for 10 mins to get all that hot heat out then wrap it back up in a towle etc as this will stop the brisket from continuing to cook. I like to rest mine for a Min of 6 to 8 hours this really does make a difference. 👍

Wagyu briskets have so much fat you never really have to Spritz them at all especially the Snake River farms Gold edition
