      Check out "The Butcher Shop" in Pensacola Fl. (ua-cam.com/video/4cA6oqYgmBs/v-deo.html) Their customer service, and prices are both awesome. The Waygu (Kobe beef) brisket will definitely cost more, but after you see how much less you will have to trim, it's worth the Xtra money... Check out the video on "Home of the A9+ Waygu brisket"... They have everything and anything you might want, and they only charge S&H for what the item costs. They never mark the S&H up to make xtra money.. (which is something I like)

    I wish you shared the wagyu brisket with your neighbor who has suffered through some of the other not-so-perfect cooks. I'd love to have seen his response to trying such a magnificent cook! Thanks for sharing.

    Just took mine off the grill along with ribs and whole chickens. I used pecan and cherry wood the flavor is amazing I can't wait to cut my brisket.

    Nice backyard cook on that brisket. Did you source that from THEBBQHQ? Wagyu does have a different mouth feel, at least to me and as you mentioned, due to the marbling. Keep up the good work.

    I cooked that exact same Brisket. And it was Incredible 😇. I also just smoked 4 Choice Brisket’s last Sunday which were a pain to trim. But 60 people thought it was The Best Meat they have ever had !! The $50 extra for Wagyu is totally worth it if your only cookin for about 6 People. But if your cooking for 50 + people like I did. Prime or Choice can still Make people go Crazy 😜❤️. Great Video Thank You So Much

    I have a question, did you start out on an offset smoker or something like an electric smoker? I have an electric smoker with and A-Maze-N pellet tube and love it, im not sure i have the patience for an offset, could you do a video on your thoughts on electric smokers, or use one to do a brisket? A versus video would be awesome, blind taste test your friends.

      MrD_IV he likes offset smokers. They give it better taste and are harder to use but better for flavor in the long run

      @@jordanpacheco3784 I totally understand that, and eventually ill be getting an offset. My question was more along the lines of has he used an electric smoker, or willing to test it out so us beginners can see how much better an offset is or how much of a difference there is. I have searched all over youtube for a smoker vs electric smoker video and have found nothing. Mostly just people saying traditional smokers are better but not doing a heads up comparison.

      MrD_IV I’ve had both. I used a $30 char broil smoker I bought off Craigslist to make a brisket and it came out fine just Bc I did everything right but it was a little more work. I also have a green mountain pellet grill and I’ve made quite a few briskets on it and they were all amazing. A pellet grill is the way to go for a beginner nexuses you can make basically anything without any mistake as long as you follow the steps. They’re both great but a pellet grill is easier to use and requires less work.

    I picked up a wagyu brisket from Snake River Farms for Christmas dinner. Immediately looked to see if you had a video on smoking a wagyu brisket.       I was gifted a SRF gold brisket for Xmas. Been on the smoker for about an hour and a half this morning. How did yours turn out? I've been rendering tallow from my trimmings all night. Would you think it would be beneficial to wrap with tallow or is it already rich enough with the internal fat?

      @@wooltron1 I used some trimmings to make smoked tallow and added it when I wrapped. Turned out great. Tender and juicy. Good luck with yours!

      nitrile gloves . not sure about in the UK, but in the US they are in just about any hardware store . they're no different than white or blue ones .

      Those are the nitrile gloves, the gloves he's wearing under those are a cotton knit for insulation so you can pick up the hot meat.

      Buy a pair of Pitmaker gloves. These are the best on the market (and I've tried dozens over the years): pitmaker.mybigcommerce.com/pitmaker-high-heat-meat-handling-gloves/. For $30 you can't go wrong. I'm just an end user/pitmaster and have no connection to that company other than owning a pair of their gloves.

    I just finished smoking what I would describe as "Wagyu" Dino ribs, my first ever from a well known online "boutique butcher shop". I'm not a fan! I won't be buying ANY more Wagyu beef. Way too fatty for me and my wife. Prime or Choice is good enough for us and much more enjoyable to eat. I'm not hating on those who prefer Wagyu. It's just way too fatty for us.
    On a higher note, I credit Mad Scientist for teaching me how to smoke brisket. My brisket is so much improved that my wife gave the "go ahead" to get a new smoker. Thanks to Jeremy Yoder, the Mad Scientist BBQ. Love your content.

    I'm new to smoking, and found crowd cow for A5 Wagyu. I'm testing my smoker and skills on USDA Choice and would like to jump to the higher end cuts. There any other recommendations before I spend the serious coin on that cut?

      They have tons more connective tissue that needs to render, a little longer is a good thing. Also the long heated hold(10-14 hrs@165°-170°) will work wonders on these!

    Is it a F1 crossbreed or purebred wagyu? Australia tends to produce a cross between a holstein and wagyu.
    It would be interesting to see you bbq holstein and angus side by side to compare the two breeds. Angus tends to be beefier and firmer, while holstein tends to be creamier and softer.

    I have a pellet grill and I want to know if I can smoke it for a few hours at 160-190? The reason why I ask is because the smoker/grill I have has the smoke setting and it goes from 1-4. When I have it set on 3 or 4 the temperature stays like 155-165. I want to know if I can smoke it for a few hours to start out with those temps and then bump it up like normal. ?!?!?!?

I'm hoping you fat-fingered your google keyboard on that one and meant some other tasty animal ;) No way I'd ever do raccoon! I've done moose ribs on my offset but that is really difficult because of how lean moose is. The lamb sounds awesome though. We love lamb at our house.

    I have a question. a neighbor of a buddy of mine asked if id cut down a tree that was in her front yard, as I was cutting it down it smelled good so I asked what kind of tree it was and she said, dogwood. it smelt so good that I googled if dogwood would be used to smoke with, but I didn't really find an answer. I did see where someone said it was similar to oak but with maybe a lighter smokiness. I was curious if anyone has ever used or heard of dogwood being used to smoke with. my gut says its ok just maybe not the first choice to use. also that brisket looks amazing.

      @@MadScientistBBQ I've seen Waygu briskets a few times here at our local HEBs in Texas. Not sure how the grade compares to the one you used. I think it was $5.99 /lbs. Trying to perfect the technique a little better before trying the more expensive one.

      @@zoniannitrate2905 Was this A5 that he used? He said it was Australian Wagyu. What I saw was I believe American Wagyu which I think is usually less than Japanese. Not sure where the $200/lb come from. Glanced at Crowd Cow and they showed Japanese Wagyu tenderloin for $103 for 7 ozs, so that is close to $200/lbs, but that is tenderloin which is always going to be more than brisket. Crowd Cow didn't show Japanese Wagyu brisket. My general point is that it sounds like it is possible to find at least American Wagyu brisket.

      @@mistabenton9666 Academy Sports is where I bought mine. 1/4" steel, 400 lbs beast $999. The Pecos its brother is the same but the metal thickness is less I believe 3/16" $399 range

    Was your total cooking time 15 hours? Did you let it rest very long before cutting?
