A fine video. Thoughtful, measured and informative. Thank you.

    Good video.
On my fixed geometry system, I put heat shrink electrical insulation on the clamps. It's stiff enough to not let the blade move while making clamping much more secure and reduced the risk of scratching a blade.

I love my Kadet and I have never had a problem getting the angle I wanted. I have the L adaptors as well, they are the best accessory I have for it. The universal table is also great for tools like chisels. I have also made some longer guide rods so I can use the full length of the stone for longer blades. I have so many diamond plates ceramic stones and strops for this system now it's very versatile. I will be using some old hard drive magnets to keep it from moving when doing the longer blades. Nice video thanks.

What about stability? Is the base large/heavy enough without clamping or holding?

I haven't tried not holding it to be honest. It's just feels natural to put a hand on the base. But it's quite heavy, so I would assume it should be OK.

Why would the K03 be more professional or faster to sharpen with if the stones are the same?

Because you would save time on turning the knife over to the other side - K03 doesn't have a lever, it holds the frame using detent balls.
