Transfer data between iPhones with unlimited FREE iCloud storage

Since iOS15 and iPhone 13 launch, one of the new features in iOS15 is that you could backup to iCloud even if you don't have enough iCloud storage.

Trying to find out if I use this process - can I do it at the store? Or does it take a super long time ?
At what point can I start factory reset on the old phone and hand it into the shop ?

I am getting a new iphone and want to know if using the backup and restore feature will keep the authenticator running as usual, or do I have to completely turn off authentication and then put it back on the new phone? I have also made a safety backup copy on the iPhone with the old data on steam (email password), now I have changed them for security reasons, will it put me on steam normally???
or the data will not be valid because icloud saved the old data to steam

You only get the 21 days of temporary storage when you buy a new iPhone. So sure if you want to buy a new iPhone every 21 days

Remote servers, aka "the cloud," have been a known security risk since they were first implemented. Always choose local storage when possible.
