Oh it is delicious with the cloves and nutmeg, pineapple and pears to balance the rest of the carrot cake flavours. Pomona's Pectin helps keep the sugars lower too.

It still has 2-1/2 cups of sugar in 4 cups of jam, but at least it's not 6-1/2 cups. But with some research, I think it can be used with sweetener instead of sugar.

This shows that you won't feel deprived at all when what we eat tastes delicious and this recipe certainly looks delicious! I have seen a carrot cake jame recipe made on another channel but it was NOT low sugar, so BIG THANK YOU for making a low sugar one. It looks absolutely delicious. I think you using pears is a better idea so that its doesn't take away from the flavor of the carrots. I personally think the apples would overtake the flavor. I'm also glad you did it without stevia, as I don't care for the taste too much of stevia.
I think there are artificial sweetener, honey, or alternatives recipes for use with Pomona 's Pectin. Use the method that's going to work best for you. I like Stevia, but I know not everyone does.

This is from a recipe on the Pomona's Pectin website. There is a Ball/Bernardin recipe but it has loads of sugar.

Now this is one that is on my Canning Bucket List. It just sounds delicious.
It is great. Ball/Bernardin has a full sugar Certo recipe. Pomona's Pectin has the 1/3 the sugar recipe.
This looks delicious! I have that book but I've never tried that recipe. I will be soon, though.
The recipe in the book uses 6-1/2 cups of sugar. The recipe I used was from food dot com. I put the link in the description.
