Every since I tried gelato, I haven't gone back to traditional ice cream again. Gelato is king!

Graeme Thomas , small batch home freezers not costs much, Pro costs less than 2 grand or 7 thousands if you want a decent one. Home make, you can use a cooking pots, electronic thermometer help to pasteurizing. But you may need to search small batch of commercial use Gelato mix based from some bakery and pastry shops.
I'm here after another rabbit hole of sorts. If anything like your coffee machines this would be an awesome product

They put the boiling 85 degree mixture into the ice cream maker, which turned it into ice cream within 20 minutes? Did they hide something or is this how it works?
They pasteurize the milk with the caramel, the pasteurizer takes the mixture to 85c and quickly cools it to 4c before putting it into the ice cream maker
One Smart Scoop a day for $1.00 will create a better person. I love salted caramel l!!!!!!!

Tang Bui Quoc , there are many books 📚 you can study and you can learn it from your experience and you decide the domestic sweetness and flavors. Books teach you how to balance the recipes. Ingredients suppliers should help you out.

@@catiamezalira That's not the correct recipe because the chef says 500G milk and there was no dextrose or stabiliser mentioned or seen in the video.

If you watch Masterchef Australia they use it and also Heston Blumenthal

There wasn't any actual measurements of ingredients which is a shame only the below.
Caster sugar 18% of gelato and controls scoopability, sugar goes to an amber colour, 8% cream, skim milk powder, milk, murray river pink salt. If you could share the recipe that would be nice

That texture of the ice cream in that little cup served, is NOT the same as the one that comes out of those giant soft-serve machines (Carpigiani style). That thing in the cup is just exactly how the little home-style ice cream makers churn out. They are just trying to promote the brand Breville. IMHO, $$$ is not worthy of that texture. Instead, be happy with the similar kind of texture that could be churned out of the cheaper $$ versions or even the way-cheaper old-fashioned hand-cranked models for which you need ice and rock salt.

Oh God those old fashioned gelato domes in the fridge are so ugly! Good Italian gelato is displayed flat nowadays. Hope you'll change this! :-)
