100% - the Gateway Arch Museum explains so much about the westward expansion and the Missouri History Museum had so much info about Tornados and Fires that we had no idea about too - the city has seen a lot!
LOVE both places, but I am partial to Edinburgh when I travel. I won't ever leave America (live in OK) but I will stay for long extended periods of time in Edinburgh when I get the chance. Missouri is an amazing state, with KCMO being one of the best choices you could make in terms of visiting. I'm glad you were able to experience the heat, baseball, good food, and the greater differences. I'm sure you'll want to bring a few things back with you to Scotland, such as the food portions and the price of petrol, but hey, that's what traveling is all about. Love, learn, live.
We lived in Oklahoma for 10 years too so our paths have crossed closely it seems! And yes, gas/petrol prices in Europe are bananas versus over here... Glad you like Edinburgh - it's a very unique city.
We LOVE Kansas City. Nice to see you made it to Chicken N Pickle it's a fun place. I also noticed you were in Art Alley. Did you by chance find Jim's bar? It's kind of hidden in the alley, but it is an amazing old school bar. When you walk in it's like stepping back into 1973.
We didn't make it to Jim's bar - when we were at Art Alley it was part of a tour so we had 3 venues chosen for us. I've never been to 1973 but I've heard it's nice back there ;)

If you bring the kids to St. Louis, you must do the City Museum - also good for adults, but crazy good for kids
Oh yes, we did it on a road trip around 10 years ago before kids - they will definitely love it!
