Wow! my favorite Master Chef is flawless once again!
Back from Scotland and ready to try some of your 2024 recipes. This one looks to be the first of many to come this year. Lately when making pasta dishes I've let my sauces be more thinner and tossed the pasta in to cook instead of using a separate pot with salted water. I've liked the results so far and may do some more experimenting with the technique. Cheers and Happy New Year to you and Whiskey.
Happy new year Gerry, that technique certainly works, it will create more starch in the sauce and pasta can be a little less fluffy. Depends what you prefer. Keep experimenting and Enjoy!

I made this yesterday and tasted as I went along. It was good and put it in fridge. Today I actually enjoyed it for dinner. Yikes, crazy good! Seriously, couldn’t believe I made this ragú. Time wise, It is a recipe you commit to but so worth it! Having neighbors over for dinner and this will be the dish. Used a sprinkle of red pepper flakes and Australian white in honor of our favorite Chef. ❤

I always use freshly grated Nutmeg, in a lot of Pasta Recipes, and other things... its adds that " little something ". ..although, I'll need to purchase the Mince ... ( I do have a huge Kitchen Aid Pro, but I don't have the attachments, lol ) Whiskey is so well trained ....hats off to you on that,as well... " A well trained dog is a Joy ...." ,and not to mention how gorgeous he is !

Great! Thank you so much! I have checked some recipes in Italian, but I didn't understand well what was at the place of the tomato. I see it is the cream+broth, so it is a sort of "salsa castellana", "salsa española", or "roux" with extra ingredients. I am trying to understand what it was used before tomato was brought to Europe. Sofrito+wine+broth is a basic of Iberian and Italian food.
A nice alternative to the well-known "Ragout Bolognese" 👍

Pappardelle is my favorite pasta noodle. Usually use it when I make a Ragu, but never tried a white Ragu.

I would make a big batch, and freeze some portions. But you'll get a good 5 days in the fridge.
