    Bruschetta is absolutely one of my favorite appetizers!! Thank you especially for sharing how to add the crunchy cheese on top. LOVE IT!! I have to make it your way and share with my family.     I love the recipe, Joe. It's a keeper and the panini press is a great idea. Every time you say OMG I expect my grandmother's heavy duty wooden spoon to come down on me! She simply would not allow that in her home. You say gosh about half the time so maybe your Nonna had a spoon too! I like to share this with my kids so every time you smell something I just start coughing cause I know it's coming! We really enjoy your channel.

    This looks absolutely delicious. I could eat tomatoes every day and theres only so many ways to eat a raw tomato lol thanks for the recipe and i love your enthusiasm. I can tell you really enjoy what your doing.

    Now here this folks - if you haven’t made these deliciousness, you’re missing out. These bruschetta have to be the Best
    I’ve Eveeer made, ok. Including the Parmesan/Romano crunch. Best of the Best. Again Thank you Very much Italian Joe.

    For myself I like a little bit of cook time for my veggies. So after I toast my bread in the oven with olive oil just till it's very light in color then rub my garlic, add veggies, cheese and top with a drizzle of olive oil, I then return it to the oven till the cheese turns a golden brown and the bread toasts completely. Takes a few mins, don't walk away lol However, for a truly fresh taste I would use Joe's method. If you don't have a panini press you can always use two skillets as long as one fits inside the other and weight the top skillet with a can of something heavy. I do this with cast iron skillets so I don't have to weight it. Works fine.:o)

    I use my toaster oven for the bread and it toasts on both sides at once. It gives it a good crunch. I don't have a panini griller but I do have a little lean mean grilling machine :) I'm gonna try. I like your recipe for bruschetta. PS You look like a younger version of my friend, Kevin.

    I thought fresh basil was a staple in bruschetta. Is using basil in bruschetta Americanized bruschetta?

    Personally I think the tomato juice has the most flavour, don’t throw away add to your soup or whatever! However I do understand why it is removed.

    Joe, you need to learn how to pronounce the word Bruschetta first LOL... It's Brew-sketta... I thought you have Italian heritage? I like the video, but the juice is the best part of the whole thing. Secret is to only top the bread before you serve it, then it won't get soggy... Italian grandmothers are turning in their graves that you are throwing away part of the tomatoes...

    Thats not how you pronounce it. Bruu-sketta is how you pronounce. I learned the from Italian master chef in Calabria when my brother took his cooking school at his resort.
