Interesting, there are quite the number of complications dealing with wood preparation. Having to stop and examine then adjust accordingly. A job done fairly well on reaching a better understanding on your line of work.
At what percentage is the wood dried to where you want it? And once you have it there, how do you deal with the humidity in Florida? You can't keep it in the kiln forever.

I learned years ago, when I had a Woodmizer, and a Kotter dehumidifier dry kiln, was to stick to one species at a time. It saved in the long run.

Couldn't you drive the moisture tester pins into the end of the slab, and avoid marring the flat surface?

When you drill it, it creates heat and drys out the wood. I think. :)
It really takes that long to dry them slabs out I thought the kilm speeds up the process that is crazy. It's true we learn something new everyday.
