It’s just the negative pressure in the joint when it’s briefly opened up during the movement, so it’s pretty normal that when the bones shift a bit it leads to the noise and a bigger shift is more likely to cause a bigger sound, but it’s entirely possible to get a really good adjustment without the sound too.
If you go to a person who is properly trained and licensed to do this kind of adjustment, yes. Most of the horror stories you see are people that get adjusted by some other professional, like a physical therapist or doctor. Not that PTs and MDs can't be qualified; my own PT is trained to perform adjustments. But in general it is safest to go to an experienced, licensed chiropractor to have it done.
