I’ve been using the recipe for a few months now!! First time I made it my family was picking out all of the veggie (garlic, onion, Tomato & pepper). So what I do NOW is I sauté all the veggies first, throw it all into a blender & add it back to the pot to cook the Albondigas! They have no idea they’re still eating it 😈 they’re convinced I omit it lol
I LOVE Albondigas soup! Other than Pozole, it's my other favorite soup to eat. I could eat this everyday with corn tortillas. It's a rainy day here in LA(thank you Jesus), and this sounds like the perfect soup to have on a beautiful day like today. Love your channel and I look forward to more delicious recipes!🙏🏻
I just made albondigas soup for dinner tonight...(it's snowing and cold) so a perfect night for it. I add celery in place of zucchini and I use El Pato tomato sauce in place of regular tomato sauce for a bit spicer flavor. I've never heard of adding mint but I may try it next time. Steph! Made this tonight and omg, so good!! I made a few adjustments for the things I had on hand (dried cilantro, dried mint, etc.) but we agreed that I don't need to change a THING! Albondigas is one of my favorites on a cold day! I followed the recipe over the weekend, in place of meat I added plant-based meat balls and instead of potatoes I added a chopped turnip. it turned to be a Low Carb and Low Fat soup, DELICIOUS.

Once you make the switch you can never go back. Using fresh ground beef (you can make it as lean or fatty as you want to) in this recipe really blew my mind. Cheers!

When my father made Albondigas, he rolled the meatballs in seasoned flour so the broth was thicker. We loved it this way over mashed potatoes!!!
