This is wonderful! My husband has recently had some digestive issues so a very clam diet is in order, so I've been looking for a banana custard for him...no vanilla wafers, no graham crackers, no baked meringue on top and I think that this is what I've been looking for! I am now subscribed because you take us through technique so effortlessly and make it work! Especially your comments to people with questions! You are a DOLL!
Questions 1) could you use sugar instead of agave 2) would it be a good filling for a truffle? (There was a curious George book with banana cream chocolates and I want to make all the chocolates from that book)
You can definitely use sugar instead of agave. Adding more gelatin would help to make it more of a filling inside a truffle (perhaps 20% more). Enjoy and thanks for watching!
What should i do if i want to use a real banana? Can i blend the banana with extra milk? Let's say 100ml milk with 2 pieces of banana? Or any other ratio?
Hi Ella! Thank you so much for watching! A banana may be added. We would cut back on the amount of cream cheese if a whole banana is used; maybe by ¼ or ½. The banana should be pureed and can be added at the same time as the cream cheese. We hope this helps. :)
Confused - in the video, you say this is a: "banana cream cheese filling", but, the video title conveys: "banana custard filling". Custard would be made with eggs, and cream cheese filling would be made with cream cheese.

If I put this filling in my donut how long can it last at room temperature. Thanks in advance for your response.
Probably for the day. Thanks for watching!
Could I use banana extract instead? Maybe 1teaspoon?
You definitely could! Very very little though since ours is so concentrated! Thanks for watching!
Good ☝️
Thank you!

Where are the bananas?
We use real bananas to make our banana compound. It’s very concentrated. Thanks for watching!
