      For Orange Chicken and several others, it's a rather simple thing once you've got the chicken right. Mainly bite sized chunks of chicken friend in tempura batter.
      Most places use an orange jelly cooked until it liquifies while working in some orange peel and chopped, dried chilis of different types and a little cornstarch slurry added to thicken it up before dumping the chicken back in to coat it.
      There's several different dishes that are similar with different options to coat it.
      One chinese restaurant used to have beef and pork versions of all the different glazed dishes as well...used to love them, but they decided to simplify their menu and then reduced it again due to covid.

    Try pouring the sauce into the wok along the sides so it touches the wok first. If it's hot enough it will add some extra flavor

    Do not wait for Sam to show you how to make Reuben egg rolls. Pastrami, sauerkraut and swiss cheese fried inside a wrapper. Dipped into a horseradish yogurt french dressing.

    One of my favorite adventures in cooking with my adult son was when we made egg rolls, which I had not done since I was his age. He was so patient and stayed for much longer than he intended to, because of rolling all those egg rolls, but even he said it was worth it in the end. I sent him home with a couple dozen. We did ground pork, so we cooked the filling first and it had to cool. Exciting to think we could do shrimp without pre-cooking.

      You can actually fill them with raw pork and it will still cook though. if you're very worried buy an instant read thermometer and make sure the inside hits 160F. Also lower the oil temp to 350 so that they don't burn in the time it takes to cook.

    My wife and I went to a bed n breakfast that served breakfast eggrolls. There were AMAZING! You should try making those. (Basically breakfast burrito in an eggroll)

    Those noodles looked awesome! I would have added some mushrooms. Only because I can't have any noodle dish without mushrooms!

    Made the egg rolls. Wow they are wonderful. I’m not big on the ginger so next time I’ll cut it in half. I do admit I never used fresh ginger before and was surprised. Thanks Sam.

    Was wondering about the raw shrimp part. You’d think to maybe flash fry them before wrapping. But hey I guess it worked out. Great job Lance !

    The soy sauce noodles are fantastic. I have made them several times. Tonight, I wanted to have steak and lobster. I took two 4oz lobster tails out of the shell, cubed them up and added them to the onion portion of the cook. followed the rest of the recipe and it turned out fantastic! Thanks, Sam, for all your creative ideas for food. You make cooking fun with so many ideas! Oh, and I think I'm going to qualify for your if "fat is flavor then I'm..." tee shirt pretty soon lol.     What also works to keep cutting boards in place is non-adhesive shelf liner. I have 12x12 and 8x8 pieces of EasyLiner in my cookware drawer just for that purpose.

    spring roll pastry is the worst to separate. I wish i could get Sam's Egg Roll pastry, it separated sooooo easy. I love homemade spring rolls. Usually make like 30 and freeze them..

    I make a Southwestern (TexMex) inspired beef egg roll with a touch of soy sauce and shredded jack cheese that the entire family ask for all the time. You can literally experiment once you get the rolling of the egg roll down. Make them spicy, oriental or even go out on a limb and do something you like, hell even a pierogi one with some mashed taters and onion and a bit of Wisconsin cheddar. You can also bake them to remove some of the fats and oils if you wish, just as crunchy.

    Can the egg rolls be fried in air fryer and what temp and time would you suggest? Also, if air fryer, ok, any coating on the egg roll wrappers to help crisp up or will they do that on their own?

    I use a silicone mesh that comes on a roll, and cut it to fit my different cutting boards. It dips the board from sliding around and you can rinse asnd let dry. Gold upo aand put in a drawer for next time. A towel, you will have to launder if good juices get onto it.

    A tradition my family has on lunar new year is to eat soup with rice cakes in them. They are small and round and represent wealth because they are shaped like coins. Typically a thin beef or oxtail soup. Then lots of side dishes and rice! Yum!

    Suggestions for a gluten free noodle? I know you mentioned rice noodle was not recommended. Also gluten free egg roll substitute? We are in Canada so the pickings for variety here are slim.

    I’m using palm hearts noodles. Low carb. They are great for stir fry noodles. Your meal looks Smashing, freaking Shock n Awe. I got that term from my uncle who was in Afghanistan .I used soy sauce, oyster sauce 1/4 tsp. Burn sugar . And of course sesame seed oil. And toasted sesame seeds. I’m an experimental cook.

    Dragon, Rat, and Boar. its actually Dragon (Attack), Bear or Turtle (Defense), and Tiger (Agility). three determine specific martial arts styles. I love Lo Mein noodles!
