The grandpa actually pronounced "horchata" better than the grandson. But I do agree with the grandson that the Cabeza is the softest beef with Lengua the second most tender beef. The food looks really good but putting lettuce and tomato in a burrito or quesadilla is a straight up American gringo move, in Mexico they don't put lettuce in tacos or burritos.

Now, for "Special" quesadillas, you get Lorenzas or Caramelos (adding grilled meat); QuesaBirrias (Adding birria meat and dipping the tortilla in the consomé of the birria); Sincronizadas (Adding slices of jam and avocado, and some times a sauce); Quesadilla al pastor (With pork/lamb meat that has been marinared in adobo.

Your grandpa is adorable and I love how he pronounced horchata correctly (yours needs quite a bit of work lol).
I'm from México and this food spread made me really sad, though. The US uses a lot of fillers on Mexican food and mess it up. Burritos and quesadillas shouldn't have lettuce, tomato, nor sour cream in them. Nor rice, at least these burritos didn't have that. The torta also had too many unbalanced fillers.
Lime juice is essential for tacos de cabeza and lengua, to bring out the flavors properly and cut the fat. That birria looked dry and sad. Birria is best when eaten in a bowl like a soup/stew. Most US places make birria wrong, anyway.
The flautas were missing avocado sauce and tomato sauce, and red chili sauce. Them being filled with al pastor meat is a deviation, but it sounds tasty.
And these were just "garnachas" (and very limited), kind of like fast food, and nowhere near representative of our cuisine, even if they claim just one region of Mex.
There's more, but I'll let it be for now lol.

The main difference in these Mexican food dishes is what’s carrying the meat, so it’s extremely important to eat them right off the griddle . The meats all take a long time to be prepared so they’re not going to change much if you wait 30-60 minutes, but the whole point of eating a quesadilla is its crunchiness combined with the cheese pull that’s missing when you wait for over an hour to eat it. Same with the torta, the bread is toasted for a reason, and if you wait around for it to get steamed in a wrapper you’re missing the whole airiness of the bread combined with the velvetiness of the refried beans mixed with bits of salty, crumbly cheese. It’s like judging a pizza that was delivered an hour ago, nothing beats when Mexican food is eaten straight off the griddle, the most you can wait to truly experience it is the walk to your car. Once all the ingredients all hit the same temperature, food’s basically ruined and you lose that difference in textures and it all becomes one jumbled mess. If you reheat the food with the lettuce, tomato and avocado in it you’re basically a monster. 😂

I agree with Grandpa on Tres Leches cake, I'm not a fan either. This was so fun to watch & new subscriber here! My daughter moved to China 5 years ago to teach & married a Chinese man, my wonderful son-in-law ❤ I will share your channel with them, they are here visiting Oregon for a month.
