this video contains all lines for the unplayable characters like ndoul, death 13 and cpu/boss vanilla ice (not including gray fly because he literatly just reuses other character's voice lines)
ndoul has some unused lines that can only be found at the sound test, the only ones he ever uses are his death sound and his laugh sound.

N'doul, Hol Horse are pretty much a wasted character, could loved them both befriending Jotaro and his friends becoming a Crusader.

Actually, Araki did throw around the idea of Hol Horse joining the Crusaders, but this was scrapped due to Polnareff having a similar personality. In fact, Chapter 157 actually has a group shot with him in it.

If you are still interested however, you can check them yourself
Open up the game, then go to Map game inputs (or press F5), scroll down until you find "Region"
Double click it and change the value to 0x70, then close the menu and restart the game
You can navigate through the characters by holding Heavy attack and pressing Start
You can change background by holding Start and pressing any attack button
