How to Pickle Beets

- In this video we show you how to pickle beets. We go from harvesting from the garden to the bottle. Some people call these sugar beets but we have always called them pickled beets. We make a sugar brine with apple cider vinegar that we fill in the jars. This was a recipe that we have used for years that came from my Grandmother. I hope you enjoy the video and find some time to pickle your own beets, they are delicious.
Here is the recipe:
2 cups of apple cider vinegar
1 cup of beet juice
3 cups of sugar
Simmer for 15-20 minutes
1 bay leaf per jar - quart or pint
Soften lids in steeping water
Water bath for 10 minutes or per your elevation, ours is 5500 ft
Let jars rest being covered for at least 24 hours - Розваги

After doing a quick internet search, we did not see anyone use the beet juice to create their brine, everyone was only using water. Using the beet brine gives so much more flavor and color to the pickled beets.

Since I've never met Grandma Johnson, I was super excited to find out that we had been using her recipe. Like my dad (the guy in the video), I also felt the recipe to be more meaningful.
You have met your great grandma Johnson, you just don't remember.
How long did it take from start to finish and how many cases did you end up with?
We did 4 cases of beets and it took us roughly 6 hours. A few of those hours were just waiting for the steamers to get up to temp. We had the two steamers running and we loaded them three different times, that took a good portion of the time.
