DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. You can see how to order these by visiting us on our website. Oh, and no difficult-to-find or crazy ingredients! Just simple ingredients and delicious food. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.

Get out of the Kitchen Chicken, THE BEST Chicken & Rice Recipe
6-8 CHICKEN LEGS (SKIN ON)
OLIVE OIL FOR BROWNING CHICKEN
1 1/2 CUPS UNCOOKED RICE
2 10.5 OZ. CANS CREAM OF MUSHROOM SOUP
1 CUP ORANGE JUICE
1/3 CUP SHERRY
1/2 CUP WATER
1 ENVELOPE LIPTON ONION SOUP MIX
Grease a 13x9 casserole dish with oil. Add the soup, sherry, orange juice, and water to a medium bowl. Add olive oil and chicken legs to a hot skillet with a lid. Brown legs on all four sides with the lid on the skillet to prevent oil from splattering. Once the chicken is brown, turn off the skillet. Pour drippings into the soup mixture and whisk until smooth and creamy. Add rice to soup, mix well, and immediately pour into casserole dish. Try to distribute the rice as evenly as possible across the bottom of the dish. Lay chicken on the top of the mixture and sprinkle with the soup mix. Bake covered in a 350-degree oven for 1.5 hours. Casserole must be covered to prevent the loss of moisture. All moisture is needed to cook rice, so DO NOT bake it uncovered.
OPTION: You can use raw chicken without browning if you cook it in the oven for 2 hours.
Crockpot: Use the same recipe above, cover, and cook on low for 4 hours.

We called this Grandmother’s Chicken (and yes, we called her Grandmother-very Edwardian family). But you’ve inspired me to try this with Thai chili paste and coconut milk in lieu of the cream of mushroom soup and orange juice. Thanks for the inspiration!

There's a lot of delicious with this one. Comes close to the old pork chop recipe.
Because you utilize certain products when cooking, there was a pot roast crockpot recipe from about 15 years ago that uses C- cream of mushroom, C- tomato soup, and L- beefy onion for the gravy.

When i make chicken and rice i aways mix up my mushroom soup add the seasonings and rice in a pot and heat it up for 10 minutes stirring it up so the rice won't stick on the bottom of the pan and get burnt then put it in a casserole dish ( but leave at least a 1/2 or a cup of the soup mixture out ) and place the chicken on top of the soup mixture and with that 1/2 or cup of soup mixture i pour it on the chicken, cover and bake it at 350° for an hour or so and check if the rice is cooked.

my parents used to make a huge batch of this with vegg on the side..and maybe bread... you can also do pork chops this way also... and she is right its unreal yummm!!!!
Back in the late 60’s and 70’s I would often make a version of this using either chicken or pork chops and mushroom or celery soup
and put it in the oven and when we got home from church dinner was almost ready. I haven’t used canned soup in many years, 10+, maybe even 20+. I also used different types of rice. We all enjoyed it, but don’t think any of my kids make it.
The Campbell's soup in the UK is concentrated so we have to add a can of water too, is it the same in the US? I may have added one can of water to help the rice, either way it looks yummy 😉

This reminds me of the no peek chicken I make. Only I mix the rice with chicken stock mixed with the cream mushroom and cream of chicken. I often use uncle Ben’s long grain and wild rice with 23 herbs. I then nestle the chicken in and cover with French fried onions. Although, the original recipe called for Lipton soup mix. I cover and cook for 60-75 mins. My family loves this. I sometimes throw broccoli and mushrooms in for the veg.

I made this casserole before church on Sunday morning! I did not brown the chicken the onion mix took care of making the chicken brown and pretty! My recipe was 2 cans of mushroom soup and rinse each can with 2/3 water to get every drop and add additional moisture for the rice! We also added a brown gravy mix with the water and added to soup! This gave the rice a lovely color! We liked mushrooms so l placed sliced mushrooms over the rice! Then we wedged chicken down inside the rice! We used thighs and legs! Then we added mushroom soup mixture over the top! I sprinkled the top with black pepper! And then we added the onion soup mix over the chicken! I placed the lid on my roaster pan. I then placed in the oven at 300 for the time we were in church! When we came in the smell was awesome! I would check the rice! It was usually perfect! The chicken when be succulent! My mama taught me how to make it and i used her pan! It was a small oval roaster! If the chicken needed to brown l turned heat to 400 and removed lid! While we set the table! I usually served with sliced tomato and crockpot green beans! ❤❤❤
I did not use the orange juice but my Granny always told me to rub my chicken with a few tablespoons of vinegar to make it tender! Actually any meat is better and more tender! She originally said 350 for 2 hours but we extended for Sunday school and church! 9:30 to 12:15 or 12:30 and adjust temp to 300! This recipe is so easy you can make it anyway you want! Onions, peppers, and 1can tomato soup rinsed and 1 can of crushed tomatoes! We used pork chops and they too were wonderful but different! You can cook a large pork loin the same way! The rice is always wonderful! When we have the garden l throw scraps of onion, pepper ends, tomato ends, squash ends, couple stalks of celery, carrot ends, what ever i have left i put in a large gallon bag until its full and throw in the freezer! I throw corn Cobs after i have cut off corn! When i want veggie soup l add 2 gt jars of water and black pepper and Worcestershire sauce and run it in my pressure cooker for 7 min! Once done strain veggies out! You have wonderful vegetable soup! I freeze in 4 pint containers and it takes little time and is so much better than store bought! I am 71 and my mama and Granny lived thru the depression! Everything was saved! Potato peels, etc!

I make something similar and I called it Chicken a la Wendy 😄my sons were little and asked what it was and I just came up with that name😂 it’s my youngest sons favorite and they still call it that 😄

looks amazing, but darlin I am gonna have to swap out the cream of mushroom for either cream of chicken or cream of celery as mushrooms and I got divorced many many years ago.
