My take on this is that professionally produced IRs sound a way better than the results you get with something like a LR Baggs Voice Print.

The Taylor IR has a bit of a constant resonating overtone that could almost be perceived as sounding like feedback in the mids. On the other hand, you can immediately hear when switching between the IRs that the Taylor one was made for a smaller bodied instrument. It has less depth, which is actually more accurate for the size of guitar you're playing.
The thing that doesn't seem right to me when I hear the D-45 IR is that the EQ curve is intended to complement rosewood, not mahogany. And the depth of sound is a little artificial sounding just because the guitar doesn't naturally have that.
I think a Martin IR from something like a 000-18 might be a better fit than either of these. Same tonewoods and similar size of instrument.

That’s some great information. Ideally I’ll make an ir of my guitar, but in the mean time I’ll look for some alternatives with similar size/woods.

Is the FM3 like a DI box or an interface?

It can be both. It has balanced line level analog outputs, and can be a digital I/o using the usb. It outputs 24bit 48khz.
