    My husband has wanted chickens for years. I finally gave in this spring… mostly bc he convinced me it could be part of our homeschool learning along with the garden. They finally started laying eggs a month ago. Perfect timing! With the current egg prices, I am very happy to collect breakfast from the backyard every morning. 😅

      My Aldi is $2.74!!! I had an Instacart coupon so I arranged an Aldi pickup, choosing the pastured eggs and they subbed in the standard ones. I'll pay a little more for good eggs but I am NOT paying almost $3 a dozen for cheap standard eggs.

    Hey Christina, for those Zucchini - the centre is probably gone spongy as they're so large, but they're fantastic halved lengthways, hollowed out like a boat and stuffed (or cut into 1/2 inch rings, hollowed and stuffed). Traditionally, a mince filling is pretty good, but my family loves a brown lentil, onion, celery, carrot, mixed herbs & bay leaf mix topped with goat's cheese and caramelised onion... one Zucchini (Marrow) would probably feed 12 people like that, with potatoes and greens on the side!

    Because of the cost of everything now, when I find a great deal on what we eat, I do typically buy it. Even if we don't need it necessarily. The other week, the fatty ground beef was 9.99 for the 5 lb chub. We have half a cow between my sister, parents and my family. Yet, I bought 3 of the chubs. I haven't seen less than 2 a lb for beef in at least a year. I don't blame you for buying things when you can. I will hazard a guess that these prices will not be seen for a while if ever

    Here are a few of my frugal tips. I buy 2 costco rotisserie chickens and cut all of the meat off for various meals. I keep s baggie in my freezer and add stuff to it to make chilli: cherry tomatoes that are starting to wrinkle, bits and pieces of onion, small amount of left over taco meat, a few table spoons of salsa or tomato sauce. Will all go in my next chilli. Another thing we always do is make a crustless quiche and have it for breakfasts or lunches

    🌮🥒Zucchini tacos. We had these last night. Sauté some chopped zucchini with onion, garlic. Add some seasoning, salt, pepper, chili powder, cumin. Add corn at some point. Put in some rotel tomatoes and cook out excess juice. We eat this on wheat tortillas with some kind of cheese, sour cream, hot sauce. It can be altered quite a bit, but it’s fairly tasty. I use the leftovers in bean and cheese quesadillas. 😋

    I am from Canada and went to the states last week. I finally understand why everyone is freaking out about food prices. I used to love grocery shopping on vacation but this time it was crazy! I couldn’t wait to get back home and pay higher but much more reasonable prices.

    We get zucchini that big in the U.K. and they’re called Marrows here. You can make a great chutney with marrow raisins and ginger, you can make it into a fritter with Halloumi and can even be used in cake (there’s a recipe online but I’ve never tried it)

    I am with you on the egg prices. Our Walmart used to sell the big box of eggs, 60 count, for $5.72. They are as of this week $18.92. Crazy!!!!

    Best thing to do with a huge zucchini.
    Cut in half lengthwise. Scoop out the seeds. Make your favorite meatloaf. Stuff the cavity and cover with spaghetti sauce. Sprinkle with parm or mozzarella cheese and bake until zucchini and meat are cooked. (my mother in law used cream of mushrooms soup, but my husband preferred the Italian sauce more)

    There are just 2 of us retired people and we spend $325-350 a month..difference now is we dont buy junk food like we used to..strictly meat ,pasta,fresh fruit, veggys and can goods

    Hi Christine I feel your pain in regards to inflation costs. Here in Ottawa prices are just crazy. I want to tell you that you are 25 years my junior but I have learned so much from you. In the few years I been watching with your advice I have created a pantry bought a small freezer to help take advantage of sales and discounts . It has made a huge difference in getting my household into shape. Thank you Christine I’m very grateful for your smart, funny and wise advice!

    I freeze milk when I find it at a good price. I also freeze eggs. You have to scramble them first and freeze in a silicone muffin liner. Then take them out and put them in either a freezer bag or vacuum seal them. Also I use to buy the nature valley peanut butter granola bars but have switched to Aldi's version of them. Not quite as good but for less than half the price of the Nature valley, it's good.

      @@hatcherhomestead One muffin liner is one egg. You grab one out and leave it on the counter for a few minutes. It will thaw. You then use them in recipes that call for eggs or just toss them in a pan and cook them for breakfast. Omelets, cakes, french toast, etc anything you use an egg for.

    Zucchini bread. Grate all ofthe zucchini, leave out the seeds though. Package it in sizes to fit your recipe and freeze it. Later, just that and make your zucchini bread.

    Hi Christine! The dry red beans can be found at any asian grocery store. Also, a tip on the Ice drink - stick it in the freezer until it starts to crystallize. Tastes even better😁 I'll have to track down the ginger lime. I'm intrigued 🤔thank you 😊

    Hi, what I do with oversized zuchinis is get the seeds out, grate them and freeze them in individual containers. Use them in bolognese, stews, no one knows and all good for vitamins, etc..

    I have a neighbor who has chickens so I get 3 dozen eggs from them all the time, so yes it does pay to be nice to ur neighbors. Those zucchini's reminded me of the ones my Dad grew, he had a very small garden on the side of our house, with just 2 tomato plants 2 zucchini plants n 2 cucumber plants, but he would get enough to supply us all summer long. Where I live I don't have any area that gets enough sun to have a garden wish I did.

    Hi Christine! This is unrelated to the video, but I wanted to share something I made for lunch today that I thought you might appreciate. We are also huge fans of the Madras Lentils from Costco and usually eat them over brown rice, but today I had a wild idea to try them over ramen. So, I cooked a packet of Maruchan chicken ramen noodles, poured out almost all the water, mixed half the chicken seasoning packet into them, then topped it with the lentils. It was deliciouso! I took photos, but don’t think I can include them with the comment. It was a tasty, thrifty, filling meal and we will definitely be eating it again.

    When we have too much zucchini, we chip in into ice cube size chunks, then we freeze it. We use it in fruit smoothies. I know that sounds odd but you can’t taste the zucchini. It adds smoothie water content to the smoothie and it is slightly sweet. It’s also oddly makes it a bit creamier

    eggs freeze easily! when you find them on sale, buy extra and freeze them. Then you can thaw and use them in anything that is baked (cookies, muffins, quick breads, quiche, etc) they just don't work for eggs cooked on a stovetop (scrambled, over easy, etc)

    I did my quarterly Sam’s shopping trip and spent 350.00, but I am stocked up for several months with that.. I shop clearance sales on everything I can, including meat and I use my food saver, also we grow a pretty good sized garden and put up a lot of veggies.. we have chickens so I am not having to spend the ridiculous price for eggs.. and I’m trying my hand at water glassing my eggs for the first time this year.. love all the tips and tricks that you share! 😊

    So the extra extra large squash are called goguzze, (pro. Gah- goots like boots) in the Italian American community. Because they are woody in texture seed them and pickled them. Zoodles might need a lot of cooking time because of the texture.

    Zucchini bread, Chocolate Zucchini Bread, Frosted Lemon Zucchini Bread, Zucchini veggie lasagna, Zucchini Fries, Fried Zucchini slices, Chicken Zucchini Casserole, Zucchini Fritters, Zucchini Pizza Crust, Stuffed Zucchini Boats Family Size LOL, but ya there is alot you can do with Zucchini.     I put out an Ad out on my town chat- "wanted! farm fresh eggs".
    I have been glassing eggs for 6 mths. We try a few from each storage jar every week and they are soo fresh. Make sure they aren't refrigerated until a few days prior to eating. Cold eggs don't break as easy in the pan. We used large plastic cheese puff containers from the neighbor and large gal drink glass spiket containers from Walmart. I have probably 60dz plus fresh eggs and they will last up to a year if kept in dark controlled area.
    Do not wash them before storing with pickling lime. They need the original mama plume on them- less bacteria. 1oz lime per quart water.

    I live in NC and our egg prices have come down a little, but I usually buy the 60 count box for $6 and they are still sitting at $12. I can't force myself to pay that. Also, thanks for all the useful information. I have been watching you for years now. I never miss a video!❤️

    Those big ones you can shred to make like zucchini bread zucchini cookies you can put it in with your pasta meals like if you make a pasta sauce they're a little bit in it it makes it richer it taste better and it if you find your sauces a little runny it'll help thicken it up there's a lot you can do with those great banquets cuz they're going to be very seedy

    Get chickens.. They are easy, the kids could do it! Get hardy Rhode Island Reds Chickens, they lay about 320 eggs a year and can handle hardy cold winters. They eat bugs and ticks in your back yard if you free range them.

    If you ever see the Sparkling Ice with caffeine those are my favorite drinks. The blue raspberry and the strawberry citrus are the best, but I've liked all the ones I've tried.

    Check with your local farmer’s markets. Many of them offer meats (Hamburg, steaks, etc) at great prices and grass fed. We recently bought 90/10 hamburger for $4 a pound!! A great price!!!

    My outside upright freezer is FULL. I am adding more and more berries, since blackberries are out and FREE. I layer them onto a cookie sheet and freeze them, then put them into a gallon bag. I then use my steam juicer to make juice from them, eliminating seeds, then will can quart jars of the juice to be made into jelly or syrup later. However, my freezer is so full I really need to figure out if I should can some items now to free up space. I have about 4 gallon bags of zucchini from last year that I HATE to throw away. I hate wasting food. But my zucchini is in now and I don't see another way around it.

    My in laws have chickens and we are so lucky that they share their eggs with us!! We haven’t seen them for a few weeks and we ran out a little bit ago. I cannot bring myself to buy any. I just can’t.

    Our local Aldi was selling eggs at $3.29/dz. This week we went in and $2.19/dz! Yes, I got two. It breaks my heart that when I started shopping there eggs were 0.59/dz.

    I live in the uk and our food prices are hiking up daily. I was in the States in April and could not believe the prices of fresh fruit and vegetables. I bulk buy offers now to help minimise the soaring prices.

    Thank you Christine, I went to Costco and Spent $497.00 because prices have gone up.I budgeted for $300.00 and I did get everything on my list. But I’m on a limited budget.

    Christine, just an honorable movie mention…when you were showing your grocery haul and you mentioned how the hot sausage freezes beautifully, I pictured a scene in Steel Magnolias and it would have been perfect inserted there lol. Do you know what scene I’m referring to? Anyway, I have been watching your channel for a long time and you and your family never disappoint…much love and hugs to you all 😁💖

    I love these monthly hauls. I often find the Alfresco brand Chicken Sausages and meatballs @ a local Independent Grocers Association store clearance priced. I scoop them up ! 1 sausage is a portion size so for usually $2.99 / package my protein per meal is $.75 - and they are delicious

    TJ in expensive areas (like where we are in CA) or NYC can be the cheapest option for some products. Their bagged pasta is nice and is $1, some of their produce is convenient and for us reduces food waste. Similarly, some of the convenience foods like frozen pizza or fried rice are on par with other specialty items and about the same price or a dollar less.

    When my mom got big zucchini like that from friends she made zucchini bread. Yummy in my tummy. The one she made was sweet, like carrot cake.

    We are only two, and even penny pinching, we spent 260 euros to eat this month. We have a lot of produce, and that isn't cheap. So, 700 dollars to feed 6 isn't bad at all.

    Zucchini relish time!!!!
    Well it is in my house today, I cut up all the zucchini and onions yesterday, salted them and let them sit overnight.
    I've cut up my red and green peppers and about to start draining and rinsing the zucchini /onion mixture.
    Here's to having a years worth of relish in the pantry by the end of the day.

    Egg prices are killer and in the last year it is a protein that my son finally eats so we have paid the new prices to get them. We were totally out because I refused to pay whatever the price was at the store I was at but something over $3. I got a digital $5 off $5 purchase and I bought eggs and ice cream both on sale and paid like $0.68 so I could pretend egg prices were cheap. Stock up price is now anything around $2. Going out today to get a $1.99 frozen pizza and $0.09 ramen packets with my remaining $4.35 left in my monthly budget. My husband said is the sale one penny off on the ramen and I said no $0.70 off and he was floored since he is so far removed from grocery prices. Big accomplishment of the month staying under budget!

    It's kinda crazy you chose this year to track...this has got to be the most intense inflation difference in just 6 months time. You can see the prices increasing from video to video....if you bing them of course...😁
