I loved sugar cakes as a child, when my parents came to Barbados to bring me to the state, we went into town for something, I remembered seeing the old lady selling sugar cake, I asked my mom to buy me a bag. She asked me if I knew how the woman grated the coconut, I said no. And she told me the old woman would chew up the coconut and mix it with the sugar. Well that was it for me and my love of sugar cakes. My mother had a no sugar household rule. May she rest in peace.

Hi Tinaraine, just a tip I bought a silicone teabag which I enclose with any herbs or spices to flavour the pot and just take out the bag once the contents are infused. I found it on Amazon as my husband hates crunching into cloves or cardamom. The bag can be reused. Tks Cheryl

Hello good morning! when making sugar cake, to get then white yo will use white sugar, if you have white food coloring you can also add a drop, the dark brown a little molasses and of course the red will be food coloring. Hope this was helpful. Thank you so much for watching

Good morning my sister, we just finished our Sunday Service so i decided to try my sugar cakes now, it was a hot mess! not sure what i did wrong but when i added the coconut, maybe too soon, it completely sucked up all the liquid so i quickly added tap water and it went down hill from there plus the sugar cakes are definitely Not sticky so disappointed but i will have another go soon, will let you know how that goes OK! I am so sorry it did not come out the way you wanted, the only thing I can think of, did you follow the directions as shown? The heat on your stove may have been to high. Give them another try but make sure the heat is on low, so the liquid is not sucked up, you have to continuedly stir until the liquid evaporate but it should be a slow process.
Sorry to hear this. I'm bajan an one this some people don't realize is the making of a lot of our local treats are not for the faint hearted you have to practice alot even me I'm still learning so keep at it😂😂😂
Hi Sonia, I dropped them on the counter top just like that, I think the sugar cake will stick to the bottom of the parchment paper. I probably could have sprinkle water but I didn't. Water will probably help them to lift easier off the counter. Let me know what you use.

Pat Yearwood put it back in, make sure it’s moist meaning leave it a little wet. Add a little moister if you need to and try again
