I know for machinery you can use a neutral leg and 2 hots on 3 phase equipment. But not sure about large AC unit. AC unit is sketch because you don't have a single motor, you have multiple fans plus a compressor.
I don't think it was your fault. Who would think they would send a 3 phase out? I wouldn't go for that inverter thingie. Like you said another point of failure. I know woodworkers use them for equipment but I wouldn't trust it for an A/C. I use that same surge protector. I like it as it uses gas before it hits the electronics so it lasts longer.
