I have never been to either park but many many years ago my family went through the Redwood Forest more in Northern California - those were amazing to see (not as big as the sequoia's but they are pretty big too). Yeah - if you’re tight on time you can definitely get a lot done and see the main sights! Hotel was a great base too. Second time we’ve stayed in that town.
We're going to Yosemite and SEKI for the first (and likely only) time this fall. Flying into Fresno and spending the night in Oakhurst just as you did. Four days and nights in Yosemite. :)
We were up there 2017. I prefer the coast redwoods. Less people, far less rails and clutter, and the coast species actually reaches greater diameter and size, though few know of this. Here's a favorite: ua-cam.com/video/5Q4v8VbNyOg/v-deo.html

Sound amazing! Oakhurst is a good place to stay. Plenty of options for food and drink and the parks will look beautiful in the fall

We’ve not done the coast redwoods but would like to. Those parks do get incredibly busy
