    I read that the hole is intentional because doll cakes / cupcakes are popular in Russia. The tip creates a poufy, ruffly skirt, and a top-half doll gets tucked into the icing hole.
    In other videos, I’ve seen the best-looking pouf is achieved by not twisting. Just apply pressure until it’s as wide as you want it, lift just a bit for height, then break away quickly. Tuck in the doll (or pour in candies, pipe in some fudge, or top with a flat-edge Russian flower tip or good old American tip), and that’s it.
    If you want to try closing the hole during piping, I saw one baker do that by spinning one direction but not lifting much, and continuing the spin during the break. That final spin caused the icing edge to fold in on itself. It looked like she used a motorized carousel; I’m sure that made the spinning simpler but it also seems tedious if you’re decorating numerous cupcakes. Lots of stopping and starting as you go, seems to me. I’m sure closing the hole that way also had to do with her icing consistency. She probably used a silkier, floppier icing recipe.
