Fortunately for me I have relatives living in this part of Germany. That means when I go visit them, they know where to take me in the area to find authentic local dishes. From smoked dark rye bread and smoked sausage or ham or smoked pork shanks to local beers and fresh caught trout served cordon bleu style. Then also the famous Schwarzwalder Kirch Torte should not be missed. Lastly, nothing better than to have your Grandmother's olde cookbooks from that region to read through and inspire one to cook something.

My family is from New Mexico and Texas. We enjoy eating a Mexican soup called Menudo. There are variations of the recipe depending on where your family roots are from. Basic recipe includes: tripe, pig feet, hominy, onion, garlic, Hatch red chile or California red Chile or Chile Padilla or Hatch green chiles & oregano. Everything is best cooked in a pressure cooker or crock pot. When ready to serve, top with cool-thin sliced raw cabbage, thin sliced radish, diced green onion, & fresh squeezed lime or lemon. I know of a Mexican soup called Manudo , it is a tripe soup. Never had it though.
Manudo sounds extreme, tripe with cow's feet oh my 😛 thanks Scott
@@cooking-the-world Menudo is made from tripe that is slowly simmered for several hours in a broth made with tomato juice, onions, assorted peppers, salt and then later corn kernels in the form of hominy is added. Frequently eaten the next day after a session of consuming Tequila the night before, as a hangover cure.
Nothing goes to waste from an animal's parts when used for food. The same can be said in German Cuisine in the various forms of sausages.
On this side of the pond we have tripe in Philadelphia pepper pot soup; Menudo from Mexico; Mondongo from the Caribbean;

I have had Menudo that has tripe. As long as the tripe is chopped fine I can eat it.
Where I am from, (Vancouver, BC Canada), Chinese restaurants commonly serve tripe as a Dim Sum dish. It is steamed for 10 minutes with ginger an green onions, or braised in a sweet soya sauce.

Wurst salat mit bratkartoffeln is one of my all time favorites. Ready for the tripe? (drum roll) Menudo, Pho, Sopa de mondongo, Trippa alla romana, Callos, Kare-kare, Chinese style Tripe stir-fry, French andouille (but then many sausages have tripe in them, we just don't know it), Hawaiian Saimin, Ciorba de Burta, Antilles Tripe Stew, Tripes à la Niçoise, Steamed Beef Tripe, Croatian Tripe, Portuguese Tripe, Florentine Tripe (like pork rids), Dobrada, Shkembe Chorba, Trippa alle Verdure, Trippa con patate, İşkembe Çorbası. Whew... did I miss any? Oh ya, the Korean, what's it called? Did I mention Trippa alla Florentine? It's a soup.
Oh wow! And I thought that nobody eats tripe 🤩 thanks for inspiration! I need to have a look for those recipes now!
Oh how could I forget! Haggis (made from sheep's stomach aka tripe). And of course Amish Scrapple. (Similar to Haggis.)
Yes, almost every country in the world has at least 2 or 3 tripe dishes. I stayed mostly with just European and places I've been. I bet the Chinese have at least 20. South America has a ton. Just never tried any. Btw, that Vesper Speck is what we used to make the schinken suppe I told you about. You'd use about as much showing on your plate per serving (water) to make the broth, then whisk in your beaten eggs once you've taken the speck out. As far as Black Forest cuisine, For a short time I lived in Göppingen. There were a couple of good places to eat there.
Wurstsalat looks amazing and I've never seen it before. I'm not a big salad fan usually, but I am going to make this. It looks very refreshing. I've also been afraid to try tripe, but the dish with the creamy white wine sauce makes it look very appetizing and I'm definitely willing to give that a try.

Answer : "Tripes à la mode de Caen" (Caen-style tripes) is a famous traditional dish in Normandy. Motsunabe is a tripes specialty from Fukuoka in Japan, and similarly famous in the whole country.

Buhl is the plum capital of Germany. Some of their plum cakes would remind me of when I was stationed CFB Baden late 80's early 90's.
you must try black forest gateaux in the black forest, it is of course the best and different to any you have tried.

I cannot think of any german dishes that include tripe however I have eaten a mexican dish with tripe a soup called menudo love these videos I feel like I'm there with you guys!

@@cooking-the-world Tripe are not only popular in Baden, they are also well-known in Swabia, Saxony, Saarland and Franconia.
In Milan we traditionally make a tripe stew (busecca) with vegetables, pancetta, Lima beans, parmesan and sage. So good.
I also like very much trippa alla romana (from Rome) which is a tripe stew with vegetables, pecorino cheese and Roman mint
And I also like a lot Chinese tripe stew!
I love spaetzle. My mother-in-law bought me the special press and taught me how to make it. When I was a girl in the 50s here in Australia my grandmother used to cook tripe. I used to love it. She make it with a white sauce and parsley, I can't remember what else was in there now but it was a regular on the table. These days, I don't even think you can buy tripe. I have never seen it in the supermarkets.
Oh Sue! That was a video for you in this case 🤩 here in Germany you can buy tripe in butcher shop. Supermarkets don’t have it neither.
Try 'Asian' butchers for tripe and similar offal. Most of the Chinese butchers in Sydney have it, I don't have Japanese, Vietnamese or similar butchers near me.
I don't think I can come to eat tripe you can cover in the best chocolate..the texture is the dealbreaker...buy everything here is amazing..how I long to go to Germany 😊😊

Hi Marta: Thanks so much for such a lovely (and mouthwatering) video. All of the food looked gorgeous. As a confirmed meat eater (my father was a butcher)
all of those wonderful meats seem like heaven to me - despite being not very good for my health!!! - I could live on them. Tripe is a very difficult subject for some. My mother was Italian from Naples and used to cook it at home when we were children but I was the only one who would not complain!!! It is a very popular dish in many parts of Italy - Rome/Naples/Sicily/Florence - In Florence it is possible to buy tripe sandwiches from street stalls - which are delicious - as well as in Naples.
It is also popular in France and Spain.
My cousin once made a tripe snack for us to eat with drinks before dinner (Naples) it was served cold with roughly chopped pickled vegetables and served as finger food. It was very, very good. I don't remember the names of any particular recipes at the moment but you can find them on the internet. While living in Germany I was never served tripe - so the dish you showed looked very interesting to me. I have never seen it in a white/cream sauce - all the others were with tomato sauce and sometimes with beans. I live in London and find it difficult to buy tripe. I don't like the English recipes for it very much so I can only eat and enjoy it in Europe.

@@cooking-the-world Yes, it is very popular but of course there are many people to don't like it. I have a Spanish butcher in London who sells "Madrid Style" tripe in a can - with and without beans. I love it. Do look it up there are many discoveries to be made!!!

Good evening Marta and Matteus. I'm not convinced on the first few dishes, I've tried several tripe dishes and wasn't impressed. I'd like to try the "Rote Lange" though, that looks delicious. The Schinken and Vesper Speck likewise. Most meals my mutti und Oma cooked started with speck and onions frying. That landjaeger sausage looks familiar, is it a form of jaegerwurst? I've never seen a pretzel buttered, I feel I've missed out there :). My mum used to do those battered, fried apple rings and the same sort of thing with plums halved. As always for me German food is the best in the world.
Jäger Wurst seems to be a parboiled sausage. Landjäger is roh and smoked, so they are not the same, from what I can tell. I love the way you mother served pretzels! I want to try them this way 😍

Marta, hi. The segment on Apfelringe brought back memories - had forgot all about eating / enjoying this till watching you. Can you recommend an authentic recipe that I could use, would love to have again? I guess while asking, another question is that while living in Germany I always noticed how good Black Forest whipped cream was there as compared to Canadian - can you provide recommended recipe. Realize you must be so busy with people contacting you so understand if you can’t answer. Thanks much.
So James, I have found recipe for Apfelringe. This one sounds the more authentic to me: chenguins.com/german-apple-fritters. As for whipped cream we usually use Schlagsahne, so cream with at least 30% fat. To make it we use electric hand mixer and ass some sugar to it :) I guess that the fat content is the key here.

Growing up in detroit, the daughter of a German we would get Westphalia ham, is this similar to the Black Forest ham? It looked the same.
Now I'm hungry....

PPS: Sorry about this - i just remembered that the tripe salad my cousin served was also in a light vinagarette sauce. (my spelling is terrible today - and I was an English teacher for 30 years!!! So much for old age!!!)

PS: I forgot to mention one of my favorite tripe dishes from France - "Andouilette" (not sure about the spelling) these are roughly chopped tripe sausages which can be bought almost everywhere - butcher, supermarket, cafe, restaurants etc. They are like a fat bratwurst but white - and they are delicious with Dijon mustard!!!

There is a type of sausage in the West Palatinate that goes by the name Andudel. In addition to beef, pork and bacon, kettle broth is used to make Andudel, as is the case with slaughtering and sausage making. The finished sausage mass has two components, namely the fine sausage meat mass, comparable to a Bockwurst, and the spicy, coarse pieces, like a coarse sausage.

Yes, but it isn’t German. Columbian Chicarrons are fried tripe and are wonderful, but you can feel your arteries hardening as you eat them 😂

I’m actually American and I’ve never been to Columbia, but I have a number of Columbian friends and we have several good Columbian Restaurants here. Had I been told what it was before trying it, I probably wouldn’t have 😂.
