- BOLO DA SERTA
4 cups all purpose flour
4 cups corn flour ( yellow or white)
4 cups boiling water
4 tbsp sugar
3 tsp kosher salt
3 cups warm water if needed
In a large bowl add corn flour,all purpose flour, sugar salt and boiling water. Mix with a wooden spoon until well mixed. Let rest until it is cool to the touch. Add more warm water if needed. Let rest for 10 minutes. Form into the shape of a ball. On a flat surface, spread some corn flour and place the ball into the flour and press down to make it flat. Form into a circle about ½ inch thick. Bake on a cast iron skillet or electrical pancake grill. Cook until golden on both sides and firm to touch in the center . This recipe gives four size bolos about 8 inches round.

4 xícaras de farinha multiuso
4 xícaras de farinha de milho (amarela ou branca)
4 xícaras de água fervente
4 colheres de sopa de açúcar
3 colheres de chá de sal kosher
3 xícaras de água morna, se necessário
Em uma tigela grande adicione a farinha de milho, a farinha de trigo, o açúcar, o sal e a água fervente. Misture com uma colher de pau até ficar bem misturado. Deixe descansar até esfriar ao toque. Adicione mais água morna, se necessário. Deixe descansar por 10 minutos. Forme o formato de uma bola. Em uma superfície plana, espalhe um pouco de farinha de milho e coloque a bola na farinha e pressione para alisar. Forme um círculo com cerca de ½ polegada de espessura. Asse em uma frigideira de ferro fundido ou grelha elétrica para panquecas. Cozinhe até dourar dos dois lados e ficar firme ao toque no centro. Esta receita dá bolos de quatro tamanhos com cerca de 20 centímetros de diâmetro.

I love bolo de sertão, I make it every so often my spouse and kids love it. I don’t remember eating bolo when I was growing up but I do eat my share now, lol. I love to eat mine with grilled tuna steaks or any fish really. Thanks Angela.
I love bolo de sertã. My Mom use to make it to eat with fish, cozido or molho de fígado, carne assada de porco and we would dip the bolo in the molho. While we’re eating our meal, She would leave one on the cast iron frying pan so that we could eat it hot with milk … that was my Mom’s and my dessert 😂 miss those days. I make it now and eat it with milk in her memory 😢
My Mom wouldn’t put as much all purpose flour, it was like 4 cups of corn flour to 1 all purpose flour.

Hi Angela. My grandmother used to make this bread. She would put the bread in milk and sprinkle it with sugar. We loved it!
We would eat it with buttermilk when my mom made it...yummy.

Bolo da sertã looks and sounds delicious. I've never had it. I remember my mother made it, but not too often. My siblings and I didn't eat it. If we did, I dont remember. My Mom used to make these when we had small fries (smelt) from the local fishermen here. Sometimes with sardinhas too. My Aunt (Mom's sister) remembers the sopas de leite. Thanks for sharing!

Great memories. Takes me back to when my Vavó would mke them. We loved it warm with some butter. Sometimes, Vavó would insert some Pé de Torresmo into the top of tge bread with her thumb before she cooked the bread. Delicious!😋🥰

I’ve never seen this bread! We used to eat the cornbread with milk.
Can a person add some (Garlic powder) or (Onion powder) or other (Herbs) and (Spices) for extra taste .
This is a flatbread so I assume you can do that . 🤔
Since you added sugar which you never did before . 🤔
To make a sweeter type of bread . 🤔
So I assume you can make a savory flavored bread even adding a little bit of (Parsley) where the (Garlic powder ) and (Onion powder) . 🤔

Yes I have multiple videos with cod balls and as far adding spices you can try I never did because that is not the norm way to eat this bread. But it’s your kitchen you do with you want. I am glad you’re doing extra money to help out your grandkids. I do that too. Another good recipe to sell is bolos lêvedos. Check my on that one.
