    ● 2-3 chicken thighs
    ● 1 cup mushrooms
    ● 3 chucks galangal
    ● 2 tomatoes
    ● 1 onion
    ● 2 lemongrass stalks
    ● 2-4 red chili
    ● 3 kaffir lime leaves
    ● 1 TBSP fish sauce
    ● 1 TBSP chicken seasoning powder
    ● 2 tsp sugar
    ● 500ml coconut milk

    the coconut is actually what makes the chicken so tender :D i love it!! and also aromatic i love thai food, we have a really good thai food under us.. had some tempura morning glory the other day.. they cook it w tempura batter

      Galangal is part of the ginger family. We do have it in Thailand/Asia, but not sure it's very common everywhere else. You can maybe find some online, and I recommend you to have a look because even if it's same family as ginger, it is very different in taste.

      Galangal looks like ginger but is so different, it's very hard and fibrous, almost like wood and it has a pine aroma

      @@NinisCooking It was hard to find galangal root and kaffir leaves but I finally did. I had to drive about 20 miles to get them and they were frozen. They both were very aromatic though, even while still frozen I could smell them. Where I live is semi-tropical, so I'm going to try and source a live root cutting and plant it in my back yard! Very cool! Peace be with you and yours.

      😂Hahaha yes galangal is really really hard to cut. And even for chicken, the knife kind of struggled to go through. But Cy made it look easy thanks to editing lol

      Definitely can! a red chili paste will give an aroma smell, also add the taste of spicy and sweet in the soup 😊

    I always peel Ginger before cooking with it. You don't peel Galangal?
    Can I cut the chicken in smaller pieces?
    What is "chicken seasonig"?
    What is the name of the green leaves?
    You do not cook the chili together with chicken and galangal?
    Do you think your camara man can dare to say: "No, it does not taste good"? He seems to be in a conflict.

      😂 Cy better not say it doesn't taste good! Joke aside, if he doesn't like it, he will say it 😉
      For the galangal, if it's a young one it's soft same as ginger. But if it's an old one like the one I used, and you don't plan to eat it, no need to waste time peeling it 😄
      For the chicken yes, you can certainly cut it in smaller pieces if you prefer.
      And the seasoning is similar to Knorr seasoning cubes
      Lastly for chili, if you cook it together with chicken and galangal it will make the soup spicy. If you just add it at the end as I did, the soup will not be spicy and you can just have a spicy hit by eating it

      the strongest ginger's taste is in the skin, for a lot of dishes it's better to not peel it, for example in caramelized pork ribs
      I think the cameraman don't want to sleep on the couch ^^

      Maybe, I don't remember but what I can say is, I add tomatoes instead because it also gives a sourness too, even not much like lime juice. But if you want more sour taste in the soup, just add some lime juice at the very end of the cooking step. 😊
