Hey mate yeah it was actually super simple (I just clocked you here and you from emails haha). I'll put up a video in two weeks of the BBQ version, as it legit took under 10 mins to make on a cheap BBQ I grabbed from Bunnings.
You can probably cook this a lot hotter so you can char the rice more. I think the bacon fat will add flavour, but it will also cause the pan to prematurely smoke because the smoke point of bacon fat is quite low. Possibly think about adding it near the end?
Hey not wrong mate, and thanks for the input! I was really thinking about browning it a bit more, but because I had the basmati rice I didn't want to push it and just end up making mush. Valid re the low smoke point, as mentioned in it (I think) I usually use olive oil! At the end would have definitely been good. I've got duck fat now though which can take quite a bit more heat!
