Thank you Chef. While every video I watch with my my mouth open in awe, most of them I could never make. Appreciate having something simple but with complex flavours. I really like that most people would think it was just a filled cookie only to be surprised after biting into one. Bruno, I think you should offer in person classes, I mean once COVID thing starts to go down, hopefully soon! you can have classes for beginners starting from basics and move up in skills.. You have a wonderful artistic skills! I surely like to learn from you one day (I have zero experience and knowledge about baking and dessert)

What the chocolate chip and coco butter brand you use?
I made the cookies. I am not sure if they are like yours. The filling part was awesome …the cookies, I’m not sure….I expected them to be a little more crispy…are they supposed to be crispy or more like a chewy cookie. Anyway I liked the taste . I guess my expectation was that it was more like a stroopwaffle. I will definitely make the caramel again. Maybe bake the cookies more I actually baked it for 17 minutes Still a yummy cookie just my expectation was different. I also filled the cookies with a cream cheese/raspberry jam filling yummmm

No, not at all. Tips for home bakers when facing a recipe that looks a bit hard or overwhelming. Step 1. TAKE A DEEP BREATH... it's only food lol
Step 2. print the recipe out
Step 3. Mis en place... weigh/measure all your ingredients before you start baking. Sometimes doing this day(s) ahead, helps out with the overwhelming feeling we tend to get when working on a new recipe.
Step 4. Read your recipe and get to baking.... 1 step at a time.
and have FUN the worst thing that could happen, is you messing up. -Good Luck
