I am trying to learn more about canning, there is so much mis-information out there.... mis-information about food in general. I just found this awesome youtube channel where this lady water bathes ALL her canning (meat included) and it seems perfectly safe.
Yeah, I think I have seen that channel! I would never do that personally after doing all my research but people are free to do what they want to in their own homes of course, to me the cost of a pressure canner vs. the cost of an emergency room visit or worse is an easy choice
It allows the hot water to circulate around the jars correctly, and prevents the jars from cracking - when the water is boiling hard, that can cause the jars to move around and potentially break!
The NCFHP recommends ascorbic acid to keep them white & pressure canning! nchfp.uga.edu/how/can_04/potato_white.html#:~:text=If%20this%20is%20your%20first,1%2F2%2Dinch%20cubes.

No, pressure canning will have different instructions - the National Center for Home Food Preservation (nchfp.com) is an awesome resource for that!
