I'm hoping that all these new I2S ADCs are hinting towards I2SIn in CircuitPython! :O By the way, I can confirm that the WM8960 is a great choice for a DAC + headphone amp with volume control. I just finished work on the new CircuitPython library last week too. :)

PJRC (Teensy) has had some sound projects/libraries for the teensy with i2s, have you looked at that?
