    I just made these wings a few days ago and followed the recipe to a tee. It was so incredibly delicious, juicy, and flavorful. The buffalo sauce had the perfect tang but not overpowering like typical buffalo sauce.
    I love how Jeremy makes sure to explain to you all the details of his cooks.

    Here are the steps to smoke chicken wings:
    * Boil the chicken wings for 7 minutes to keep them moist.
    * Put the chicken wings on a smoker at 375 degrees Fahrenheit for 20-25 minutes, or until they are golden brown or reddish in color.
    * Add cherry wood to the smoker for extra color.
    * Sauce the chicken wings with your favorite buffalo sauce recipe.
    * Cook the chicken wings until they reach an internal temperature of 185 degrees Fahrenheit.
    Here are some additional tips from the video:
    * Do not season the chicken wings before putting them on the smoker, as the sauce will add plenty of salt.
    * Use pecan wood chips for smoking, but you can also use cherry wood for extra color.
    * You can adjust the amount of hot sauce in the recipe to your preference.

    I love your channel. I have yet to have a neighbor ask me what’s on my grill/smoker when I used to grill asparagus or corn. However when I have done a tax free liquor glaze ham, pork butts, or wings the interest seems to spike. And I can’t have a more diverse group of neighbors than what I have. 🤷‍♂️

    Keeping it simple! I like this. Wings of any kind should be enjoyed smoked. Nicely done. Never thought to boil them. I would've brined them overnight to retain the moister but you made a good point in not over salting them. Thanks for the insight!

      Every moral argument is based on biased! and ever question you can get any answer you want using any of the moral evaluation tools.
      I am vegan and like to tell vegans I follow their commandment
      Minimize animal suffering!
      So I shoot every animal I see as that is far less suffering than an animal dying in the wild by another means! Especially the meat eating animals that kill other animals as that "minimizes suffering" but they dont want to follow their only commandment when I want to follow it! 🤦‍♂️
      Look at the Panda a meat eater that has gone vegan, has to eat most of the day to get enuff to survive, so sick they cant even be bothered to have sex!

    I lived in Southern California for more than 10 years. At first, you’ll respectfully appreciate the difference in opinion of the culture. However, what appears to be innocent and harmless postulating turns into ballot measures approved by the region’s populous. Before you know it, you’ll find yourself washing reusable grocery bags to pick up a dozen cage-free eggs as crime rates skyrocket because felonies are now considered misdemeanors.

    I’ve never boiled anything before putting it on the grill or in the smoker. However, my wife boils her chicken for gumbo and it’s all good. So I might just have to give this a try. More importantly, though, much respect for articulating your values as you did on the subject of veganism. Thanks for your videos.

    Thanks for sharing your thoughts on vegansim. My wife is vegan and has been for four years. I am not. I am however about 60 percent plant based. Even though I love making traditional bbq, I have developed some vegan alternatives. Again, Thanks for sharing !!😎👍🔥

      Same here. I love barbecue and delicious food, and let's face it, vegan food is just not as tasty. But from a health standpoint, you can't deny the positive effects it has. I have a friend who overcame some pretty serious cancer by switching over to a whole food plant based diet in leu of chemo treatments. That's pretty incredible. I eat mostly vegan, but allow myself 3 meals a week where I can eat whatever I want. I feel better, my stamina in my workout doubled in a matter of days (this was after working out for 3-5 days a week for 3 months straight,) and honestly my muscle mass grew super quickly after switching to plant based protein because it causes quicker healing than animal protein.

    I tried this yesterday - I was expecting it to be not so good on account of the boiling, but these came out PERFECTLY! I made a garlic parm seasoning instead of a sauce, and it was divine. Everyone at dinner experienced the perfect crunch that was as a result of this cooking method. Keep the good stuff coming, your channel is fantastic.

    You did right with the cherry wood. I brine my wings overnight and then baste them while cooking with a simple maple syrup and butter sauce. They come out tasting like ham wings and the syrup counters the saltiness of the brine perfectly. The wings taste good without the sauce though. I also use the cherrywood because of the cherry flavored smoke.

    Just discovered your channel and your videos are very informative and well put together, so I appreciate that! Just an FYI, I am not a true vegan per se but I have been battling Mantle Cell Lymphoma Cancer for the last 10+ years and wanted to give you some insight from my perspective. A little backstory is that I was diagnosed with MCL stage IV when I was 37 about 10.5 years ago so my chances were slim and life expectancy was 5 to 6 years, but went the western medicine route & after an autologous stem cell transplant (my own stem cells) that worked for only 6 months, then an allogenic stem cell transplant (donor stem cells), GVHD issues, and then about 2 years later tumors start popping up on my back, I decided to go another route. I started doing cold-pressed juices and eating raw garlic on a regular basis, cutting out all processed foods, meat, and dairy. My tumors started shrinking and would be 100% gone after a week or so. I was feeling way better and have been in remission ever since, but for the last 3 years or so, I started eating meat again because I love to BBQ and of course eat meat and also got somewhat lax with the processed foods and dairy. With that said, tumors started coming back and then I would revert back to cold-pressed juices & raw garlic, along with some fasting here and there for a few days and the tumors would go away. Now I have found a balance doing cold pressed juices at least once a day, raw garlic once in a while, and moderation with meat and dairy. Tumors haven't been coming back and I feel great.. just wanted to share the health benefits for part-time veganism and let you know that I agree we can do both and live healthy productive lives.

      i always sigh and shake my head at people that think they're changing the world one cow at a time. but i do believe that we were never made to eat meat and the people like yourself that understand the health benefits of going vegan give me some hope that maybe people will take up veganism for their own health and not some self-righteous crusade

    I hate sports but love food. Your arguments are based on a very simple view of vegan philosophy. The whole argument for both sides speaks to how distant we've gotten from the fields. I enjoy living in a place where I have reasonable access to lots of local meats. I hunt because it's a way of keeping close to the food source. I wish I had better access to local fruits and veggies but the simple fact is lots of things don't grow well here. If you know vegan people don't argue with them, ask them to cook for you! If they make something delicious they are good cooks (many vegans are awesome cooks). If they throw some fake meat on a heat source they aren't good cooks and you will probably leave hungry and frustrated. If you cook for an LA crowd you should definitely look into vegetables that smoke well, I for one would watch that video and give it a thumbs up. Keep up the good work, I've been learning a lot about smoking in the last few days, mostly your videos.

    Hey man, love your videos. I'm a fanatic BBQ nut and learn a lot from them. I don't really want to participate in a huge veganism debate but I do think your view on the economic argument is a bit narrow. The meat industry contributes immensely to deforestation and global warming, which to me is the biggest argument for consciously consuming meat. The rest of the arguments are more or less opinion-based and hugely controversial on a global scale, but the economic argument shouldn't be.
    Also, I've been quite successful in providing smoked vegan and vegetarian options to guests who prefer it. Smoked cauliflower is awesome :)

    I would love to see factory farming go away. I raise my own pasture chickens and grass fed cows, soon I'll be doing pork. In factory farming animals get treated bad and they also come out with infections. Love your take on Vegans and yes , videos will always be one sided.

I like your channel because you normally keep thing fairly simple, without a lot of fluff that I see on other channels that make barbequing more complicated than it needs to be.     Coming from an ex-vegan of 5 years, I can honestly say your arguments are one of the most rational, well thought-out, I've come across. Especially when it comes to the different levels people can be on. I only ever did it for my own ethical reasons at the time, so was other people telling me it was wrong, correct? No. But I also kept my own views to myself, and never told anyone else they were wrong because of it. I've since become content with finding ways to source meat that is the best on both the animal/the end product. Buy ethically sourced meat, its worth it (for both your taste buds, and the animal). TLDR; i was a vegan but now im not, im not a bad guy and dont think you are either

    Thanks for the vid. Just something I do, is baking the sauce into my wings afterwards. I also really love wings that are overcooked little, or as we call it, extra well done. Don't really like juicy or wet chicken wings. I call it slimy 😅. But even if you enjoy a juicier chicken, baking in the sauce at the end is the only way my friends and family will eat them now. For a juicier bite leave them in a 375° pre heated oven for 10 to 15 minutes. If you like extra well done then 25 to 30 minutes maybe as low as 20 depending on how long you cooked them to begin with.

    I have been watching your videos for a while and most times I like what you do and sometimes I don't, BUT I just got mad more respect for you after finding this video. On the wings, I would take them out the water and bathe them in oil (I use Canola) before putting on fast smoker. On having the cajones, in California, to logically & philosophically dismantle veganism... brother, I am a LOYAL subscriber.

    Great video. As a farmer I will say that all the "labels" put on meat like natural and humanely raised etc is all a bunch of smoke being blown at you. If you want to buy ethically raised meat with certain attributes you need to get to know a farmer, and buy directly from them. Love the channel!

    eating mainly proteins and fats helps to stay full, keeping us from being hungry/eating all the time...it also keeps us from adding/reaching for unhealthy things like grains and processed foods

    I'll tell you my 3 day wings process, May end up adding smoking at a later date. A lot of meat weight is water weight that is added via salting the animal before slaughter or in the processing process (dubba dubba) and this is what happens with wings. They soak those suckers, slap an ice glaze. I mention this because I will pull my wings from their bag and put them in gallon bags for two days roughly in the refrigerator. I do this to leach the fluids out which I pour out as it accumulates. When I'm comfortable that unnecessary fluids are out (You're not going to dry out the meat), I then pull the wings out, lay them on a tray, sprinkle them with McCormicks Cajun rub on both sides, then throw them back in the bags til I'm ready to cook them. I use an inground gas grill. A smoker, which I've just never have gotten around to using because I'm usually cooking these at 6am on college game day, could be used here. With the gas grill, low heat. My goal is render the fat out, char a little. At this stage I use the Franks/butter (50/50) to brush and flip the wings as necessary. When they are visually done, and this is 45 minutes to 1 1/2 hrs depending on external temps around the grill (I don't rely on the gas grill gauge), I then put them in serving pan, sauce on top with the remaining sauce (if your out do it unless you don't want to). This goes into the oven at 220 or so with a ceramic dish with water. My goal is to rehydrate the wings. (got the dish of water from Alton Brown, may have been with oven turkeys, I use it for anything I want to not dry out in the oven). I do this til I think it's ready. Remember they're already cooked so there's no screwing this part up. I use Emerile's blue cheese sauce to compliment.
    Jeremy, UK? Another note: My brother and I would split a steer from a Mennonite farmer in central Illinois. Meat is reasonable even with the salting the animal before weighing (something my brother still doesn't get).
    Jeremy, ever dry age any of your meat at home? Might be a video other's would enjoy.

    I’ve worked with a vegan in the past and when I’d bring food for my coworkers and I to eat she would have hurt feelings I didn’t do something special for her so she feel included. Her feelings her choice, she quit!

    Great video! Try to heat up your sauce a bit before adding to the chicken. It will coat more and stick better. Give it a try and see how you like it.

    Nice wings! What makes them crispy? Can you make them get crispy without the boiling? I am a proud Georgian and have a good friend who is a transplanted Kentuckian. I appreciated your talk on veganism. I have nothing against it either. I respect it. But being in the southeast, as you said, we get very little of that around here. I eat deer meat a lot that I shoot and so does my whole extended family. I smoke all kinds of meat on my smoker and we all enjoy it together. To each his own. But if they want to try to convince me that eating animals and animal products is wrong, they're wasting their time and energy. Deer meat, fresh caught fish, and farm fresh eggs are some of the healthiest foods you can possibly eat. But some don't do it and I respect that. Freedom of choice is a good thing.     I am in IT and I have friends all across the world. I have friends that will not eat meat, and some that will not do fish or eggs. My solution in the past has been build your own pizza for dinner. "You make it and you Eat it." This works really well for the kids, but for the parents also.
    So my question is if you were to smoke or bar-b-que vegies, what would you do? I have had tremendous success with corn and fish.

    Boiling them helps get rid of some of the fat, too. Hence Alton Brown steams his for I think 10 minutes before the cook. Also, nice to see they still get smoke flavor at 375. Wouldn't of thought they would!

    Never boiled legs before the smoker but will definitely try this. Great comments on Vegans. I’ve known several former vegans and some friends who are still. Their appearance is the telltale sign and sadly they can suffer long term issues because of lack of protein.

    Lov your videos. Add two table spoons of salt and same of black paper to your water. It makes a difference in the final taste of the wings . Just try it .... Outcast Smokehouse.....

    Ever try an overnight brine (dry in particular) and/or starting the wings on a cold grill? I can not get on board with boiling. You lose too much!

    Tried this on my Rec Tec pellet grill today. I think i would need to cut the boil time in half and increase the smoke time. Super juicy, but not much smoke color or flavor at all. Looking forward to trying again with some tweaks.

    Nice wings Jeremy. We use to par boil chicken and ribs, then through them on the grill just to speed up the cooking time. Good to see you again.

      @@slice169 Probably pre/par boiling ribs before smoking isn't optimal, but if you're trying to grill ribs, not low/slow smoke them then boiling is actually decent and the results are still good. Plenty of good recipes for boiling in Dr. Pepper before grilling. Smoker purists may scoff at such things, but sometimes I wanna eat ribs in an hour not nine hours, and results are still good.

    Try marinating in that overnight, pulling at 150 and tossing them under a broiler for 5-10 minutes at the end

But if the remember they're your wing and this is the way you do them,welcome to America! just wacth the video and if you think you might like to try them this way do or do not, it's up to you.     I'm interested in why you think that boiling the wings first preserves moisture in the wings. It's not intuitive to me. But I'm interested in learning.

      It’s probably similar to brining in that the meat absorbs the water and stays moist.

      It’s to avoid oversalting and it speeds the whole cooking process quite a bit. Brining would add even more salt, so I avoid that and boil instead.

      @@invisiblekid99 OK...I still don't see how boiling helps. How is moisture not lost during the boil? Perhaps my Primo ceramic grill doesn't have that problem? Or maybe put a water pan in the cooking chamber? Maybe I'm just against boiling! haha

      @@Wee_Heavy Well ceramics keep moisture in way better than offsets, so that's why you (and I) use them and still get good results. You can argue the merits or not of brining, pre boiling, but for speed and not poisoning people, I'd "pre-cook" chicken if it was going on my offset.

    Thank you for sharing this. I've thoroughly enjoyed your channel and it's certainly helped me get bitten by the backyard bug.
    I find it interesting that the same people who would get mad at me and want me ticketed/arrested for proclaiming the Gospel on a street corner think nothing of coming on a bbq channel and scolding. I certainly want ethically raised products. But I fail to see how letting domesticated animals either starve from lack of husbandry or proliferate without harvesting helps the environment or the economy. And it is certainly not more ethical.

    My sister was some sort of vegan/vegetarian forever. Until she got pregnant. The doctor told her that she was pretty much dangerously anemic and the baby was at risk. Long story short, baby came out fine after she started incorporating meats into her diet and she now enjoys it as much as anyone should. Just interesting that some folks think beans and celery can do the job that prehistoric man set into motion by beginning to hunt other animals.

    My only issue with grocery meat is factory farming. Yes it feeds the masses, but compared to hunting or small farms, its much more humane to the animals, and much better to the environment to source your meat either by yourself via hunting, or by shopping at your local farms that produce meat (beef, pork, chicken, eggs)

    So, I just did this on my pellet smoker. The only tweak was at 180 degrees (about 25 mins) I cranked it up to 450 and flipped the wings. Left them about 5 mins. Amazing how crispy they came out. Why is it so easy to make these crispy and a whole chicken is more of a challenge?

    Boiling them does nothing to preserve moisture and if anything you're making it worse if you're looking for crispy skin because you're saturating the chicken wings with water. Although I can appreciate the idea that it will pre render the fat a bit but I am not sure that will result in a crispier wing. I would've at least dried those off.
    My favorite way to make crispy wings is let the wings dry out in the fridge for a day then let the kettle rip at 500+ degrees until they're 200-203 degrees. Crispy skin every time, smoked, and so juicy and falling apart that it squirts when you bite into it.

    Holy shit. Those look good. I use that same recipe as a base then add ghost pepper flakes. I've never boiled the wings first but man did that look good. I'm guessing the science or logic behind that is the same reason some people boil ribs before smoking?

    Man growing up I was always told that you shouldnt boil wings.. I had to google it.. turns out a lot of people do. I mean my Dad used to do boil wings just to get a chicken stock to make chicken noodle soup out of it. But the wings he made were always so tiny. These wings turned out pretty good. As for the vegan thing, they always argue that "animals were put on Earth to live with us... not FOR us"... and I can see their point kind of... but the thing about mass farming is that these animals would not even exist if it wasnt for farmers mass producing them for meat. I mean I understand their point in saying what if HUMANS were harvested but we are not, we sit on the top of the food chain. And in reality, you are correct, vegans dont get the proper nutrients (look at Rawvana LOL). But aside from that cows weigh what 2,000 lbs or so? Now look at the footprint a cow takes up, can you imagine how many plants would you would need to grow to produce 2000 lbs of food? And the spoilage of fruits and vegetables is insane. In reality the best thing to do is just don't think about the meat industry if you want to eat meat. Its not going anywhere... ever... no matter what. The animals are born into mass farming, and they don't know any better and have never seen anything outside of this. Its not like a bunch of ranchers are running around capturing wild cattle and herding them into these mass farm factories.

      Knit cotton work gloves. Usually white ones or unbleached.

    I know this is old, but I just recently started watching (and subscribed to) your channel. Your thoughts on vegans, I completely agree with. What I don't understand is why they feel the need to pressure their beliefs on the rest of us.
    What's more unless than a screen door on a submarine? A vegan at a BBQ event.
    I have only ever met one puritanical vegan, whom I had a great conversation with. A debate, without anger, and mostly listening to each other not for the sake of responding, but for understanding. However, when her emotions starting taking over the debate, where she started getting frustrated, I asked her what type of car she drives. She responded with 'Jeep', to which I asked about the material covering her seats. At this point, I think it is valid I tell you that we were in the parking lot near her vehicle. We walked over to her Jeep and I saw her seats, dash, gear selector, etc were made from leather. She claimed it was fake leather. A quick google search indicates otherwise. She was dumbfounded.
    I am not going to say that vegans, or even a puritanical vegans are hypocrites. But I think its a convenient movement for those who wish to belong to the next hip thing. And currently there is a push for people to convert to veganism. There is a literal war on meat. We see it more and more, and I am okay with it, so long as I can still purchase, cook, and eat meat without fear of being prosecuted by the masses.
    Sorry for the rant.

    So, for a smokier wing, would you skip this process and smoke the wings from the fridge? Being colder so more smoke would adhere? Post process would be to flash fry for crispness? Great content!
