I just made these wings a few days ago and followed the recipe to a tee. It was so incredibly delicious, juicy, and flavorful. The buffalo sauce had the perfect tang but not overpowering like typical buffalo sauce.
I love how Jeremy makes sure to explain to you all the details of his cooks.

I tried this yesterday - I was expecting it to be not so good on account of the boiling, but these came out PERFECTLY! I made a garlic parm seasoning instead of a sauce, and it was divine. Everyone at dinner experienced the perfect crunch that was as a result of this cooking method. Keep the good stuff coming, your channel is fantastic.

You did right with the cherry wood. I brine my wings overnight and then baste them while cooking with a simple maple syrup and butter sauce. They come out tasting like ham wings and the syrup counters the saltiness of the brine perfectly. The wings taste good without the sauce though. I also use the cherrywood because of the cherry flavored smoke.

Thanks for the vid. Just something I do, is baking the sauce into my wings afterwards. I also really love wings that are overcooked little, or as we call it, extra well done. Don't really like juicy or wet chicken wings. I call it slimy 😅. But even if you enjoy a juicier chicken, baking in the sauce at the end is the only way my friends and family will eat them now. For a juicier bite leave them in a 375° pre heated oven for 10 to 15 minutes. If you like extra well done then 25 to 30 minutes maybe as low as 20 depending on how long you cooked them to begin with.
Keeping it simple! I like this. Wings of any kind should be enjoyed smoked. Nicely done. Never thought to boil them. I would've brined them overnight to retain the moister but you made a good point in not over salting them. Thanks for the insight!

I have been watching your videos for a while and most times I like what you do and sometimes I don't, BUT I just got mad more respect for you after finding this video. On the wings, I would take them out the water and bathe them in oil (I use Canola) before putting on fast smoker. On having the cajones, in California, to logically & philosophically dismantle veganism... brother, I am a LOYAL subscriber.

Just discovered your channel and your videos are very informative and well put together, so I appreciate that! Just an FYI, I am not a true vegan per se but I have been battling Mantle Cell Lymphoma Cancer for the last 10+ years and wanted to give you some insight from my perspective. A little backstory is that I was diagnosed with MCL stage IV when I was 37 about 10.5 years ago so my chances were slim and life expectancy was 5 to 6 years, but went the western medicine route & after an autologous stem cell transplant (my own stem cells) that worked for only 6 months, then an allogenic stem cell transplant (donor stem cells), GVHD issues, and then about 2 years later tumors start popping up on my back, I decided to go another route. I started doing cold-pressed juices and eating raw garlic on a regular basis, cutting out all processed foods, meat, and dairy. My tumors started shrinking and would be 100% gone after a week or so. I was feeling way better and have been in remission ever since, but for the last 3 years or so, I started eating meat again because I love to BBQ and of course eat meat and also got somewhat lax with the processed foods and dairy. With that said, tumors started coming back and then I would revert back to cold-pressed juices & raw garlic, along with some fasting here and there for a few days and the tumors would go away. Now I have found a balance doing cold pressed juices at least once a day, raw garlic once in a while, and moderation with meat and dairy. Tumors haven't been coming back and I feel great.. just wanted to share the health benefits for part-time veganism and let you know that I agree we can do both and live healthy productive lives.
i always sigh and shake my head at people that think they're changing the world one cow at a time. but i do believe that we were never made to eat meat and the people like yourself that understand the health benefits of going vegan give me some hope that maybe people will take up veganism for their own health and not some self-righteous crusade

Tried this on my Rec Tec pellet grill today. I think i would need to cut the boil time in half and increase the smoke time. Super juicy, but not much smoke color or flavor at all. Looking forward to trying again with some tweaks.

I love your channel. I have yet to have a neighbor ask me what’s on my grill/smoker when I used to grill asparagus or corn. However when I have done a tax free liquor glaze ham, pork butts, or wings the interest seems to spike. And I can’t have a more diverse group of neighbors than what I have. 🤷♂️

Great video. As a farmer I will say that all the "labels" put on meat like natural and humanely raised etc is all a bunch of smoke being blown at you. If you want to buy ethically raised meat with certain attributes you need to get to know a farmer, and buy directly from them. Love the channel!

Same here. I love barbecue and delicious food, and let's face it, vegan food is just not as tasty. But from a health standpoint, you can't deny the positive effects it has. I have a friend who overcame some pretty serious cancer by switching over to a whole food plant based diet in leu of chemo treatments. That's pretty incredible. I eat mostly vegan, but allow myself 3 meals a week where I can eat whatever I want. I feel better, my stamina in my workout doubled in a matter of days (this was after working out for 3-5 days a week for 3 months straight,) and honestly my muscle mass grew super quickly after switching to plant based protein because it causes quicker healing than animal protein.

I find it interesting that the same people who would get mad at me and want me ticketed/arrested for proclaiming the Gospel on a street corner think nothing of coming on a bbq channel and scolding. I certainly want ethically raised products. But I fail to see how letting domesticated animals either starve from lack of husbandry or proliferate without harvesting helps the environment or the economy. And it is certainly not more ethical.
Boiling them helps get rid of some of the fat, too. Hence Alton Brown steams his for I think 10 minutes before the cook. Also, nice to see they still get smoke flavor at 375. Wouldn't of thought they would!
Jeremy does the boiling remove some of the fat from the skin allowing for a more crispy skin in the end?
you can thicken that sauce up a little with some corn starch in cold water added - clings better
Lov your videos. Add two table spoons of salt and same of black paper to your water. It makes a difference in the final taste of the wings . Just try it .... Outcast Smokehouse.....
Great video! Try to heat up your sauce a bit before adding to the chicken. It will coat more and stick better. Give it a try and see how you like it.

Coming from an ex-vegan of 5 years, I can honestly say your arguments are one of the most rational, well thought-out, I've come across. Especially when it comes to the different levels people can be on. I only ever did it for my own ethical reasons at the time, so was other people telling me it was wrong, correct? No. But I also kept my own views to myself, and never told anyone else they were wrong because of it. I've since become content with finding ways to source meat that is the best on both the animal/the end product. Buy ethically sourced meat, its worth it (for both your taste buds, and the animal). TLDR; i was a vegan but now im not, im not a bad guy and dont think you are either

So, for a smokier wing, would you skip this process and smoke the wings from the fridge? Being colder so more smoke would adhere? Post process would be to flash fry for crispness? Great content!

So I shoot every animal I see as that is far less suffering than an animal dying in the wild by another means! Especially the meat eating animals that kill other animals as that "minimizes suffering" but they dont want to follow their only commandment when I want to follow it! 🤦♂️
Look at the Panda a meat eater that has gone vegan, has to eat most of the day to get enuff to survive, so sick they cant even be bothered to have sex!

@@slice169 Probably pre/par boiling ribs before smoking isn't optimal, but if you're trying to grill ribs, not low/slow smoke them then boiling is actually decent and the results are still good. Plenty of good recipes for boiling in Dr. Pepper before grilling. Smoker purists may scoff at such things, but sometimes I wanna eat ribs in an hour not nine hours, and results are still good.

So, I just did this on my pellet smoker. The only tweak was at 180 degrees (about 25 mins) I cranked it up to 450 and flipped the wings. Left them about 5 mins. Amazing how crispy they came out. Why is it so easy to make these crispy and a whole chicken is more of a challenge?

Ever try an overnight brine (dry in particular) and/or starting the wings on a cold grill? I can not get on board with boiling. You lose too much!

eating mainly proteins and fats helps to stay full, keeping us from being hungry/eating all the time...it also keeps us from adding/reaching for unhealthy things like grains and processed foods
Have you tried adding some baking soda to the parboiling water for extra-crispy skin?
Also, I'm curious how much smoke flavor is imparted in such a short time on the smoker. My wife is not a big fan of smoked meats while I am.
I live in southern California and I know exactly what city he lives in based on how the mountains look in the background.
I'll tell you my 3 day wings process, May end up adding smoking at a later date. A lot of meat weight is water weight that is added via salting the animal before slaughter or in the processing process (dubba dubba) and this is what happens with wings. They soak those suckers, slap an ice glaze. I mention this because I will pull my wings from their bag and put them in gallon bags for two days roughly in the refrigerator. I do this to leach the fluids out which I pour out as it accumulates. When I'm comfortable that unnecessary fluids are out (You're not going to dry out the meat), I then pull the wings out, lay them on a tray, sprinkle them with McCormicks Cajun rub on both sides, then throw them back in the bags til I'm ready to cook them. I use an inground gas grill. A smoker, which I've just never have gotten around to using because I'm usually cooking these at 6am on college game day, could be used here. With the gas grill, low heat. My goal is render the fat out, char a little. At this stage I use the Franks/butter (50/50) to brush and flip the wings as necessary. When they are visually done, and this is 45 minutes to 1 1/2 hrs depending on external temps around the grill (I don't rely on the gas grill gauge), I then put them in serving pan, sauce on top with the remaining sauce (if your out do it unless you don't want to). This goes into the oven at 220 or so with a ceramic dish with water. My goal is to rehydrate the wings. (got the dish of water from Alton Brown, may have been with oven turkeys, I use it for anything I want to not dry out in the oven). I do this til I think it's ready. Remember they're already cooked so there's no screwing this part up. I use Emerile's blue cheese sauce to compliment.
Jeremy, UK? Another note: My brother and I would split a steer from a Mennonite farmer in central Illinois. Meat is reasonable even with the salting the animal before weighing (something my brother still doesn't get).

Never boiled legs before the smoker but will definitely try this. Great comments on Vegans. I’ve known several former vegans and some friends who are still. Their appearance is the telltale sign and sadly they can suffer long term issues because of lack of protein.

I hate sports but love food. Your arguments are based on a very simple view of vegan philosophy. The whole argument for both sides speaks to how distant we've gotten from the fields. I enjoy living in a place where I have reasonable access to lots of local meats. I hunt because it's a way of keeping close to the food source. I wish I had better access to local fruits and veggies but the simple fact is lots of things don't grow well here. If you know vegan people don't argue with them, ask them to cook for you! If they make something delicious they are good cooks (many vegans are awesome cooks). If they throw some fake meat on a heat source they aren't good cooks and you will probably leave hungry and frustrated. If you cook for an LA crowd you should definitely look into vegetables that smoke well, I for one would watch that video and give it a thumbs up. Keep up the good work, I've been learning a lot about smoking in the last few days, mostly your videos.

I am in IT and I have friends all across the world. I have friends that will not eat meat, and some that will not do fish or eggs. My solution in the past has been build your own pizza for dinner. "You make it and you Eat it." This works really well for the kids, but for the parents also.
So my question is if you were to smoke or bar-b-que vegies, what would you do? I have had tremendous success with corn and fish.

I get real good smoked wings on the Weber kettle and I never do what u do by boiling them lol. To each their own here’s an idea, do a video and test out smoked wings your method and put another set on bbq pit masters method, RAW

Here are the steps to smoke chicken wings:
* Boil the chicken wings for 7 minutes to keep them moist.
* Put the chicken wings on a smoker at 375 degrees Fahrenheit for 20-25 minutes, or until they are golden brown or reddish in color.
* Add cherry wood to the smoker for extra color.
* Sauce the chicken wings with your favorite buffalo sauce recipe.
* Cook the chicken wings until they reach an internal temperature of 185 degrees Fahrenheit.
Here are some additional tips from the video:
* Do not season the chicken wings before putting them on the smoker, as the sauce will add plenty of salt.
* Use pecan wood chips for smoking, but you can also use cherry wood for extra color.
* You can adjust the amount of hot sauce in the recipe to your preference.

Holy shit. Those look good. I use that same recipe as a base then add ghost pepper flakes. I've never boiled the wings first but man did that look good. I'm guessing the science or logic behind that is the same reason some people boil ribs before smoking?

There's a certain vitamin you need from meat. I think it's b12. If you like your wings hot try Louisiana Wing Sauce it's my favorite
