Tired. It's 8:00 pm here in California. This reminds me of when I was little. When there are 4 children, mom never threw away food. One of the go-to things was pasta with diced stewed tomatoes. Simple but filled our stomachs. If there were any left overs after dinner mom would save them and on Saturday morning for breakfast she would scramble eggs over the noodles. Soooo good! And like your dish, there was usually either bacon or sausage. Mom was German and crazy about sausage. 😋🥓🥚

My daughter who is now 30 says it's her favorite meal. She didn't know it was bc I didn't have money but she said bc I made it sound so fancy and we sat and ate together. ❤️❤️❤️

@@mauroa.4993 Most recipes I've seen use whole eggs, though I think there are some that only use the yolk. Maybe it's more traditional to only use the yolk? That's very possible! I usually use a few whole and a few with only yolk. I allow it to cook partially (not to where it's scrambled) in the noodles.

Not sure folks always seem to confuse bacon with a traditional Italian carbonara. Guanciale is used, not bacon. Maybe you just need to put all pork as just one type?
This is a dish I grew up on in the US. My mom grew up in Poland and it was a cheap staple when she was young. It's still one of my favorites/regulars. We always pan fry the noodles in butter and don't whisk the eggs (allows for combination of egg whites and yolk throughout dish). Just lower the heat and dump them straight into the noodles and stir for a couple minutes until eggs are cooked, salt to taste after. We also use angel hair/very thin spaghetti noodles. Loved seeing a different version though, made my day!
I would prefer the Angel Hair Pasta as well, but do like the eggs mixed completely. We prefer the bacon crispy, too. But after pouring the noodles into the buttered pan and mixing in the eggs, I cook just until they begin yo set. Turn off the heat and quickly add the grated cheese, mix thoroughly, add crispy bacon or guanciali. Remove to bowls instead of frying the noodles so all is creamy. Sprinkle with freshly chopped parsley and serve. A very tasty luncheon. Might add a fresh salad of baby spring greens/lettuces and any extra veggies you want. Croutons and a vinaigrette. Yum.

Später wird es zu einer Art „Frittata“ mit Spaghetti (eine richtige Frittata wird aber normalerweise von beiden Seiten gebacken). PS: Sagen wir, dass es am Ende weder eine „Carbonara“ noch eine richtige „Frittata“ mit Spaghetti raus gekommen ist.

Carbonara only uses the yellow part of the egg, not the white part. 👌🏻 that why they dont fully get cooked because you can eat then raw.

Hallo ! Als Italiener ich weiß jetzt nicht genau, was ich davon halten soll. Am Anfang sehe ich da ….sagen wir mal so…. eine Art „Carbonara“. Später wird es zu einer Art „Frittata“ mit Spaghetti (eine richtige Frittata wird aber normalerweise von beiden Seiten gebacken).
PS: Sagen wir, dass es am Ende weder eine „Carbonara“ noch eine richtige „Frittata“ mit Spaghetti raus gekommen ist.
