I accidentally got the wrong meat for my French dip sandwich, I’m gonna use this method and when it’s medium, I’m a pull it out and cook it the rest of the way in the Ajou sauce.
Curious, so what do you do at every stage of cooking? New pair of tongs at every temperature change? It's not cooked after it's been on the heat for 30 seconds, but it isn't raw either. Do I need new tongs every 20 seconds? 10? 5? At some point it gets ridiculous doesn't it?

It’s beef. You can literally eat beef raw.
