      I’ll give you the biggest tip in the world, before you do anything, put the fat side down on the grill because it needs to cook. The fat needs to render. It won’t render the way this dude did it. Just get those burn marks on the fat, and then do pretty much what he said. You have to burn the fat first! I feel like this guy is going to yell at me, but I hope not. Hopefully you take my advice.

    I really like this grill and use it especially in the summer when it's too hot to cook indoors ua-cam.com/users/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I use this to slow roast a brisket and a pork butt using indirect heating and both came out fantastic! The tiny grease pot didn't cut it, though, but placing a foil roasting pan from the dollar store underneath the grill solved this issue. ;) Both took over 10 hrs to cook and one burner on low kept a steady temp around 225f the entire time. You'll need to know how to put things together and take your time assembling it. Over the next few days after I used it a couple times, I went back and tightened down screws and bolts that needed it after the metal expanded and contracted from normal heating. As for the value, I have used $400+ grills and this one performs just as well in my opinion. Plus, I have a side burner that the others didn't have which I've used for making sauces, rice, and even boiling potatoes. I burns about 1# of fuel with all burners on medium per hour for me so a 20# The tank will last me about a month of cooking several times a week. The cotter pins remove the burners a snap making it easy to clean underneath them so I don't have any flare-ups from collected gunk burning when I grill the next time. I'm going to try smoking with it this weekend so I'll post back and tell how that went.

    Bonus tip, season the 4 sides around the steak as well, wiping up seasoning that overflowed from the initial two main surfaces.
    This especially flavors the fatty parts - the fat seriously sponges in the flavors so heavy marbling in the steaks = way more flavor.

    The time is 2 minutes then 2 minutes per side then 1 minute and 1 minute. Per side. Total 6 minutes. From room temp sitting for 1 hour b4 grill. Salt & pepper while sitting room temp. Pat dry Bbq screaming hot (about 1/2 hour). Rub some olive oil on striploins both sides before you put on bbq. Tent rest 5 minutes. Perfect medium rare. Mine were this exact size.

    Turned out a little salty and more a medium than medium rare….BUT it’s delicious and I am not disappointed. I’ll just have to reduce the time next time.
    I did the 2.5min then change angle angle 2.5 min then flip then 2.5 min.

    If you want to cook it medium to well done, how long do you grill it for? I was thinking around 10 minutes: 2 1/2 minutes 4 times (2 times on each side). Is this right?

    600 degrees?!?! Sheesh! That’s insane! I mean obviously it works but I usually have my grill around 400-450. BUT I also Ike rare steaks so maybe that’s why I can have it lower? I still get a good sear.

    I'm afraid to close the lid, it always flares up like flames out of hell when I reopen it. Even after 2 min and it chars the steaks beyond recognition, rendering it useless. What can I do?

      Do you always keep lid closed or open? How do you suggest to watch it. When I made one NY Steak it came out as planned. When I did two at a time, Weber Grilled flared up on me. Burned the outside.

      That's not true at all. Searing causes a maillard reaction. The heat causes a reaction between the reducing sugars and amino acids and your steak gets the delicious caramelized lines on it, which absolutely affect the taste.

    I hate this trend. Quality meat only needs kosher salt... maybe fresh black pepper, but THATS ALL. No other seasonings, rubs, powders, etc. preferably on a wood or lump coal fire. Let that beautiful meat speak for itself.
