If anyone is like me and rarely has bread flour: Bread flour has a higher protein content than ap flour but to boost protein in ap flour I always add about 4g of vital wheat gluten to every 4 cups of ap to make my own bread flour. It helps keep the structure of the dough fluffier by keeping the protein content higher.
I made your all-purpose dough the other night for the first time and used it for garlic-herb monkey (pull-apart) bread. It was awesome! I'm really looking forward to making this bread! It looks so delicious! I'm not a super-natural baker either. Something about it seems to elude me, but I'm confident with your videos and instructions! Thanks!!🥰
