We were just at this tea shop yesterday. It was a lovely experience and we bought some delicious teas. The staff were great and we were lucky that the lady who poured us teas spoke fluent english. My boyfriend was looking around because he thought the space looked familiar. Then he looked up your channel and he was right, you had visited this shop as well. To sound like dorks, we were excited about it. ^^

So far I have tried making some dumplings, its really fun and delicious,., next stop - soup dumplings! and then hopefully one day visit china! Unfortunately, I don't drink tea that often, so our 20ish bags are all inside of my pantry, and last time i got some from my uncle, he was like "Here's some tea you can put in your pantry that we can drink next time we visit you in the United States".
Oh wow. Your schedule is so packed, "busy Mike". It's good able to travel all over, but do find time to have a good rest whenever you have the chance. Busy traveling without good rest is not good to your body at all.

It's probably some kind of Oolong. Taiwanese Oolongs in my experience is very light with s honey aftertaste. It's usually more relaxing than stimulating.
Have you visited Jiufen near Keelung, Taiwan yet? It's not far from Taipei, but it will probably be clustered by mainlander tourists (like the museum you visited before). BUT, it's worth the trip if you've never gone. The food in that mountain village is delicious and the view from the top is amazeballs.

Gong fu guru, is the only way to get all of the flavors and none of the bitterness or astringency. Though, brewing western style is ok for tea bags, for most teas, you should brew gong fu guru, so that it will not be bitter, and only brew for 5-60 seconds.
Fascinating, I didn't know about the advantages of using small pot for my tea. I'm also a nut for bad weather. When in Korea, try some yaki mandu (served in rolled-up news paper) from a street vendor. Salty, fried, goodness.

What you don't see is that the guy is likely also pouring plain hot water over the teapot throughout as well to keep the teapot at a consistently hot temperature. Hence, you need a tray to catch all the excess water.
The spilled tea is tea wash, it opens up the laves of the tea, and washes it from any dust or dirt that may have gotten into the tea for the 2nd infusion. But the second infusion you will have a more rounded and better taste of the tea than the first one. Even in some teas you can't even taste the tea that much at all in the first or second infusions, so they will rise it twice, and then they will actually be able to taste the tea. This is all a part of Gong Fu Guru tea brewing, which focuses on getting all of the flavors out of the tea, and none of the bitterness.

It's been so long since I've had Taiwanese tea, last time I tried it was with these exact cups from your video. Still my favorite to this day.
I love all kind of tea Earl Grey is my fav. O long tea from Taiwan is special not bitter but sweet tasting.
