Years back people used whatever food they had available to them and became creative and the great thing about your recipes is that most people have these food staples already at home. Reminds me of what my grandfather, father used to cook....(which I now also cook) ....Zarzuela but this dish is much simpler to make. I might try this soon but I will use whole fresh shrimps/prawns (heads included) plus mussels. I think these will give the dish a more complex flavor profile. I enjoy watching your videos. Keep it up.
Cooked this one this evening and it was so delicious! I used Monkfish instead of tuna and mussels as my seafood market did not have any clams. It was amazing, even with me forgetting to add the tomatoes! Broke open the saffron and paprika I bought in La Boqueria to cook this. Very nice indeed!!
In my city, Hippon, the city of Saint Augustin, there is a great similarity between your classic Spanish dishes and among those in my city ... my grandmother's cooking. My mother's cooking ..... the same (quasi)
This stew recipe has all the ingredients to thoroughly fill up and satisfy my tummy. Wow i love the tuna steak and shrimp...however this will make my stew a very expensive dish because where i'm at, seafood like that is pricey. like 444 my dear friend.

This is not a negative comment but a real question. What do we dry the fish and the shrimp for if it’s going back into a liquid? I totally understand this step if we were searing. And that liquid we dry off would add flavour as well, wouldn’t it?
The interesting thing about the Mediterranean sea: There was a giant land mass that connected the British Isles to Africa, Europe, and Scandinavia. The sea naturally eroded away the shoreline, exposing the land that was under sea level, causing a massive flood, during the very early Bronze Age. PS I looked up the saffron, and expected it to be about $50.00. Was I wrong!
It looks very nice, unfortunately, it has seafood in ( prawns and clams) which I cannot eat, I am allergic to them. Can I leave them out, or can you suggest substitutes?

To remove any water in the fish, that way it can absorb all the flavors in the pan :) much love
