Vitamin B2 (riboflavin) provides an excellent yellow fluorescence as well. You can just use multi-B vitamin caps, but you'll get more weird flavors and less fluorescence. If you can find pure riboflavin (order online unless you have a well-stocked vitamin store nearby), it has very little taste, but is highlighter-yellow. Riboflavn seems to be what is in many commercially available fluorescent food dyes.
A lot of fluorescent dyes are used in the biological sciences to highlight internal structures. I would imagine many of them are non-toxic, as many of them target activity in functioning organisms. Some of them are probably already found in perfectly wholesome food already or have a long history of safe use in medicine (quinine falls under both). Others might take time to find out if they are safe in food, which would involve a lot of regulatory hurdles and money.
I'd like to see Long Island Ice Tea pods! Also pina colada, black or white Russian. Does this work with drinks served neat or does it require the alcohol be diluted?

This recipe only works with tonic. You can make an awesome cocktail pod with the mojito, it just won't glow in the dark

Any type of booze that is above 32 percent alcohol would not freeze
